French Beef Stew

I have been using this recipe for years now, and it never disappoints. I have had to change my ingredients a bit since moving to Greece, as canned Italian-style tomatoes are not available (so I make my own). I also now use fresh thyme from my herb garden instead of dry. But the recipe is excellent as is! Love it!

One Bowl Chocolate Cake III

I made this recipe as 2 dozen cupcakes for a friend's birthday last week, and the cupcakes turned out beautifully. As has been said by many, don't let the extremely runny batter scare you. But DO be careful not to overfill your pans. I used a lipped measuring cup to pour the batter into my cupcake liners and had no problems. Great recipe. I did not give it 5 stars simply because I wanted something a bit richer. Overall, though, it's a keeper.

Mimi's Smoked Salmon Chowder

This chowder was fabulous, a wonderful treat on a cold day. My husband and I enjoyed it with some fresh bread from our bakery and made two full meals out of it. Delicious!

Basic Corn Muffins

These corn muffins were the best I've ever made - just the right amount of sweet but not too much. I used 1/4 cup of melted butter instead of the canola oil and followed the rest of the recipe to the tee. Perfect!

J.P.'s Big Daddy Biscuits

I've made these twice now, and they've turned out perfectly both times. I always use ice cold milk and butter (shortening is not available in Greece) and handle the dough as little as possible. This makes for an even flakier biscuit. Thank you for the recipe!

Aunt Teen's Creamy Chocolate Fudge

This is a great, simple recipe for fudge that saved me when my candy thermometer broke. I prefer more semisweet chocolate, though, and altered the recipe a bit to favor that over the milk.

Cranberry Swirl Coffee Cake

I am uncertain how to rate this recipe. It turned out beautifully as far as flavor goes. In one day's time, all friends and family had devoured it, right down to the last crumb. However, I struggled with the batter for this cake. It was extremely thick and not pourable (as most batters are): I actually had to spread it into the pan with a spatula. Perplexed by this, I revisited the recipe to see what I may have missed or mismeasured but could find nothing I had mistakenly omitted or overused? Will definitely try again ... to see if this was just a fluke ... and because it's such a tasty cake. [I used a fresh orange juice/icing sugar glaze. It complemented the cranberry and add a lovely moistness to the cake.]
