Downeast Maine Pumpkin Bread

5 stars all around! I made this bread as-is and it was delicious. I also made a "healthy" version- 1 cup white sugar, 1 cup brown sugar 1 cup pumpkin puree in place of oil and it was still delicious. Finally, I made a "dessert" version with dark chocolate chips and cream cheese icing...and it was devine. GREAT RECIPE!! *Note- I did not get 3 loaves. I got 1 loaf and 10 muffins.

Crock Pot Cheesy Mushroom Chicken

I will definately make this again. Tasty, inexpensive, and easy! I made it without celery flakes and I used fresh mushrooms rather than canned. I also added an sliced onion. Served over egg noodles.

Pumpkin Pie Pudding

Not sure if "pudding" is the correct description for this dessert, but PUMPKIN PIE sure is!! I followed the recipe exactly, but my dish reached 160 degrees after about 3 hours. When it cools, it tastes as if you put a whole pumpkin pie in a bowl and mushed it up. Maybe that sounds wierd, but it tastes great. YUM!

Chicago-Style Pan Pizza

A great meal...filling and flavorful! I used Pillsbury canned pizza dough (which worked perfectly), made this exactly as the recipe was written and would not change a thing. Like the other reviews suggest, make sure you pre-bake the crust and thoroughly drain the tomatoes. What's great is you can basically add/change the toppings as much as you want as long as you keep the spices, cheese, and diced tomatoes...and it will always taste delicious!

Cheesy Italian Tortellini

This sauce was hearty, meaty, and flavorful...mixed with the tortellini, it made a satisfying meal that I will make again very soon! It was really easy, too. There's a bunch of allrecipeeps out there giving this recipe high marks, but they've changed it all up! I made it AS IS (minus the mushrooms) and thought it was a keeper. Also, even though it doesn't HAVE to be done in a crockpot, I found that it created waaayy less dirty dishes this way AND I could come home to a ready-made-meal (plus, it makes your house smell like a authentic Italian kitchen!) If you don't have a lot of time, it definately doesn't have to cook so long, but the point is that it CAN cook all day if you have the time :) Lastly, for those of you looking to skip the jarred sauce...you can replace it with a little can of tomato paste and 16 oz of crushed tomatoes, add your own seasoning (plus the other ingredients) and voila! Of course, this way you must cook the full 7 or 8 hours to get the sauce done right.

Byrdhouse Easy Ginger Beef Sandwiches

Once you have the ingredients prepped, the cooking part takes 10 mins. It's so quick! I left the soy sauce and chili oil (I used chili powder) out of the mixture and just seasoned each sandwich to taste. The flavors were light yet explosive! YUM!

Uglies

These were really fun to make! They were pretty easy (with the exception of folding the biscuit over on top- that part was kind of messy) and very flavorful. Although they are not the most sophisticated flavors, they were tasty and also fun to eat :) I would use this as a starter recipe for other flavors, too. Next time I might try to use Italian sausage for the meat, with spaghetti sauce, topped to mozarella! I could also see them as little philly cheese steaks or mini shepherd's pies!

Spaghetti Squash I

Solid flavors and, overall, very satisfying for a vegetarian dish (I am not a vegetarian). Be sure to bake the squash long enough for the "noodles" to be tender. Mine took an extra 15 min or so past the recommended time. Also, I needed to add some sea salt and garlic powder at the end for a little extra seasoning :)

Eclair Cake

What a great treat! The graham cracker texture with the pudding is creamy and the flavor is yummy. Definately melt and pour the choc icing on top for an eclair-like glaze. For more sophisticated flavors, use cook/serve pudding with homemade whipped cream and frosting :)

Slow Cooker Sauerkraut and Sausage

This is a quick, easy, tasty recipe as is. Very good! For me, it wasn't enough sauerkraut so I put in an extra can, plus 1/2 of a beer...served it on a hoagie with spicy brown mustard and THAT was my idea of perfection!

Slow Cooker Macaroni and Cheese I

This is a good recipe but I don't prefer the eggs in it. Also, mine cooked (without the eggs) in 1/2 the time so be careful. If you want it a little creamier, leave out the eggs and add velveeta!

Dessert Pizza

A light, not-too-sweet, but satisfying dessert! My only issue was that I had trouble getting the cookie off the pan, not sure how to fix that problem. The coolwhip definately needs creamcheese mixed in OR use a thin layer of creamcheese or vanilla icing. Some people said the cookie got soggy, but mine didn't because I used a thin layer of creamcheese icing (instead of coolwhip). Just keep it refrigerated and it'll be fine :)

Balsamic-Glazed Salmon Fillets

I gave it 4 stars because I thought it was a 3 and my husband thought it was 5, so we met in the middle. This was an interesting flavor for salmon and it was definately a change of pace from how we normally eat it. Pretty good. Be sure to let your glaze simmer long enough for it to thicken, otherwise the flavors don't meld correctly.

Slow Cooker Buffalo Chicken Sandwiches

I can't believe how quick, easy, and delicious this chicken is!! I followed the advice of some others and shredded the chicken after about 4 hours, then added a little more hot wing sauce and let it continue cooking. It was plenty saucy and the perfect spiciness. YUMMM!! I will definately be making this MANY more times.

A great smoothie! Variations: I also made this once without yogurt and it was still great! Same flavor, a little less thick. I've used frozen fruit instead of fresh, omitting the icecubes.
