Chicken Pot Pie IX

I can't stop making this recipe! It's better if you add 2 small, cubed potatoes. I went ahead and coated the bottom pie crust with egg white and baked it for 5 minutes before adding the filling --no sogginess! Also, I subbed frozen corn for half of the peas. Not only do I love corn, but it added another color to the pie filling.

Light and Fluffy Spinach Quiche

This was my first quiche and I have made it four times now. Love others' suggestions to sub half feta cheese - gives it more texture and a richer flavor profile... and I normally can't stand feta! I also sub mostly egg beaters + 1 regular egg to lower cholesterol a bit. And fat free Greek yogurt instead of mayo. Also tried adding other ingredients (sun dried tomatoes, ham chunks, chopped broccoli). It all seems to work out, so this is a great base recipe for quiche. :-)

Puppy Chow

I have to disagree about using the microwave. I tried it for 1 minute on high, stirred it, and microwaved it another 30 seconds. My chocolate came out a weird, chalky consistency. It was very difficult to coat the pieces. I tried heating it again and it did not help. Perhaps this is just my microwave or the type of chips I used? Either way, I tried making it again using the original stove-top directions and it was FABULOUS. We added a little cocoa powder to make it extra chocolatey and it was great!

Tomato-Cream Sauce for Pasta

Salmon Chowder

Fantastic! This recipe is nearly flawless and I make it often. Always use fresh salmon. I prefer a bit less dill. The carrots don't offend me as much as some others, but I love carrots.

Astounding and easy. I make it for dinner on the coldest nights. This has enough flavor to salvage low-grade roasts, but I prefer leaner cuts if they're on sale.

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

I found this recipe while searching for the best way to get rid of lots of grape tomatoes. THANK GOODNESS I FOUND IT. Apparently 3 out of 4 people at my dinner gathering can't stand pork chops, but everyone ended up just shy of licking their plates. Changes: I followed reviews to braise the meat; also used fresh basil and subbed goat cheese for feta (all I had and I think I prefer it!).
