Chicken Breasts with Balsamic Vinegar and Garlic
This is a delicious recipe - very simple and easy to follow. I made very little modifications - I added half an onion, a tablespoon of brown sugar, and omitted the flour completely. I felt that the chicken cooked a little bit too long, so next time I will shave off a few minutes in the cooking process. I served this meal over a pound of dreamfields linguine. The juice really flavored the pasta nicely. My husband really liked it. I will be making it again.

Coconut Curry Chili
This was absolutely AMAZING! I was reading over the ingredients and thought "this is just too out there, I have NO idea how this is going to turn out" but I read the reviews and everyone was raving about it so I thought what the heck, I'll give it a go. I made a lot, 2 lbs of turkey chopped meat so I really just eyeballed the measurements and it still turned out fantastic. I used creamy tomato soup because I wasn't sure which one the recipe called for. I added three generous handfuls of salted peanuts at the end (and omitted the salt the recipe called for) and it added a nice crunch. I served it over long grain brown rice. Everyone loved it. It thickened up beautifully and was even better the next day. I will be making this again (and again...and again...)

Best Fried Green Tomatoes
WOW! I never anticipated that these would taste so good! My mother-in-law, who has tasted just about every fried green tomato the south has to offer said these were by far the best she's ever tasted! I took advise from a few reviews, and adjusted it as so- I used italian bread crumbs instead of regular, I just used egg whites, and sprinkled the tomatoes with romano cheese and cayenne pepper while frying them. Absolute perfection! Thank-you for this recipe!
