Renaissance Stuffed Mushrooms

These mushrooms went so fast! They were a little time consuming to make and I ended up having more mixture than mushrooms (though I used small button ones instead of big ones) but that's not a problem b/c I can just use more 'shrooms this time. I did, however, use italian-style bread crumbs in addition to the other stuff to make the mixture more substantial. So. very. tasty!

Tomato and Basil Quiche

I only used this recipe as a base for a quiche and added spinach, mushrooms, onions and sundried tomato garlic paste. The proportions in this base make a perfectly consistent quiche- not too eggy but just enough to hold the tasty stuff together.

Eggplant Pizzas

This recipe was great and fun! Here's what I did differently. 1). I coated the eggplant in eggs and breadcrumbs rather than flour and since they were seasoned it gave the pizzas a bit of flavor. When I fried them I used just enough oil to coat the pan and they dried them w/ a paper towel before baking 2). I added veggie italian sausage, mushrooms and onion and I stir-fried the veggies a bit first so they were tender. This recipe was even liked by my very picky 5-year old daughter (of course I just told her they were pizzas, but after she ate 2 I told her it was eggplant and she didn't believe me!).

Butternut Squash Bisque

This soup is a great base to start with. I gave it 4 stars b/c I did modify it quite a lot. Like a lot of ppl here, I did roast the squash first in 1 inch of water @ 350 for ~30 minutes. I also added 1 clove garlic (could maybe use 2), 1/2 granny smith apple, bay leaf and a dash of cayenne. I used an immersion blender and it worked great (though I accidentally blended my bay leaf. Didn't seem to do anything tho!). Also I added half and half instead of cream, and probably less than 1/2 c. Though, it would have been great without any cream too! I did end up roasting the squash seeds with some Cajun seasoning and added some as a garnish/side and it was great!

Spring Vegetable Soup

This soup is awesome. It is also a great one to mix around the ingredients and add/subtract stuff. It's hearty and refreshingly brothy. I made it vegetarian by substituting veggie broth for the chicken.
