Heavenly Halibut

Followed the mixture of this recipe to a T. It was restaurant stile good. My halibut was done in 13 minutes. I put the sauce on and baked for another 1:30. Turned out perfect!

Flat Iron Steak with Three Pepper Rub

This rub is delicious! I marinated for 6 hours and then cooked on the stove top and mixed it with my veggie stir fry. Great dish.

Cottage Cheese Chicken Enchiladas

Restaurant style good! The only think I did different was cook the chicken in the crock pot. I added 2 cups of water and 2 chicken bullion cubes and cooked on low for 4.5 hours. The chicken shredded came out so tender and shredded easily. For an extra kick I topped with some cholula sauce. Delish!

Authentic Louisiana Red Beans and Rice

I've never made red beans and rice before so I followed this recipe to a T. I took some other reviewers advice and smashed the beans on the side of the pot with a spoon. Unfortunately this recipe just wasn't something I like. Too hearty for me.

Black Bean and Corn Quesadillas

SO GOOD!!! Wow, the corn and black bean mixed with the brown sugar, salsa, and red pepper is delish. Instead of using 2 tortillas I just used one and folded it. That made it easier to flip. Other than that I made no changes. Can't wait to make this again.

Stuffed Shells III

I usually add something to recipes to make it my own but this time I followed the recipe to a T. These are so good. My 2 1/2 year old asked for seconds. We're a family of 3 and we had plenty for leftovers, which I love because these are so good.

Baked Scallops

This is the best scallops recipe ever. I followed the directions to a T and served over fettucini and topped with a wine garlic butter cream sauce. Delish! Can't wait to make it again.

Slow-Cooker Barbecue Ribs

Falling off the bone good! I made some modifications to this recipe and think these ribs turned out better than any restaurants. First I mixed 3 tbsp brown sugar, 3 tbsp garlic powder. 2 tbsp salt, and 2 tbsp pepper. I then coated the ribs with the rub that I made. I baked the ribs at 400 for 15 minutes on each side. While the ribs baked I mixed 2 cups of barbecue sauce, 3/4 cup ketchup, 1/4 cup Tiger Sauce, 1 tbsp tabasco, 1 tsp Worcestershire, 1/2 cup brown sugar, 2 tbsp minced garlic, 1 tbsp oregano, and 3 tbsp of vinegar. When the ribs were done cooking in the oven I placed them in the slow cooker, then poured the sauce over the ribs. After cooking for 3 hours the ribs were already falling off the bone. I let them cook on low for 6 hours and they turned out AMAZING! Love this recipe.

Brown Sugar Meatloaf

So good! I did not put the brown sugar and ketchup in the bottom of the pan. I used the loaf pan to shape the meat into a loaf. I then transferred the loaf to a baking dish and topped with brown sugar and ketchup. It turned out great. Very tasty dish!

Sweet Potato Oranges

WOW!!! These were such a treat. I usually do something to make a recipe my own but this time I decided to follow it to a T. I wouldn't change a thing. The orange flavor, sweetness, and presentation make for a a perfect holiday side. I will definitely make this again.

Paul's Pumpkin Bars

I made a healthier version of these bars and they are still so yummy. Instead of using vegetable oil I used apple sauce, and I replaced the 4 eggs with egg whites. I also added a tablespoon of pumpkin spice. These are so yummy and I feel a little less guilty because I made a healthier version.

Green Salad with Cranberry Vinaigrette

Good but I made it better by adding a few of things. I added a tablespoon of balsamic, another 1/2 teaspoon of minced garlic, and a handful of more cranberries. That made the dressing less oily.

Easy OREO Truffles

Super easy to make. Just be sure to chill the balls before putting the melted chocolate on. Definitely use two spoons to get the chocolate on the ball. Place the ball on the spoon and use the 2nd spoon the pour the chocolate. Then pass the ball to the other spoon. This will keep the ball from falling apart.
