I went to the grocery and bought some zucchini planning to make these muffins. When I got home, however, I realized I really didnt have everything I needed. So I didnt use any honey or nutmeg. I used applesauce in place of the oil and the consistency was really nice. I used vanilla yogurt instead of plain and hoped the muffins would be sweet enough. They weren't. I tossed out the first batch and added more sugar to the second, which were better. Oh, I also didnt want to use carrots so I didnt. I'll definitely make this one again but stick closer to the recipe. I was surprised when my 18 month old ate them (like I said, they werent really that sweet) and he kept asking for more, more, more. I also have not worked with zucchini before and wasnt sure whether to peel it or use the skin. I did half and half for not knowing. Can anyone else comment on whether they peeled the zucchini?
