Honey Grilled Shrimp

I made this recipe as an appetizer for my husband and myself. I only used 1/2 of the 1/3 cup of w. sauce then added water to make 1/3 cup (to cut down on the sodium). Followed everything else to a T. My husband thought these were restaraunt quality without the price! :) Would have submitted a photo but all that was left were the tails.

Chicken Skillet Fajitas

We made this the other night only with minor changes. We had left over cooked cubed chicken. Warmed in olive oil. Added the other ingredients except used cheddar cheese canned soup for the creamed chicken. Added spices as is. Topped it off with a can of diced tomatoes with green chilies. Heated this all together on the BBQ pit. Awesome. Linda Farrell

Buttermilk Syrup

Made recipe this morning. Used reduced fat buttermilk, light corn syrup and 1/2 tsp. baking soda. It has a great carmel flavor that I bet would taste great over ice cream! Linda Farrell, St. Louis, Missouri

Slow-Cooker Chicken Tortilla Soup

Slow-Cooker Corned Beef and Cabbage

Made this for St. Patrick's day. Very good. I'm not sure if the beer did anything for the flavor. Made it again today, (03/20/2011) and it is still very good and easy.

Chicken Quesadillas

Next time will add green onion, garlic powder and red pepper. Didn't want to over fill my quesadilla maker, so they were kind of thin and bland. Look out next time, probably will start a fire!

Breaded Chicken Fingers

I used the frozen chicken breast strips and this turned out kind of bland. Next time will use chicken breasts and add more to the seasoning to spice it up.

Spicy Bean Salsa

Very good and very light/healthy tasting. Just made it and already my family has eaten about a cup of it. I can't wait to take as my snack at work tomorrow after it sits in the fridge over night. I used red pepper instead of the green because it is what I had on hand. LFarrell

Quinoa with Chickpeas and Tomatoes

This is my first experience with quinoa. I was surprised at how much the recipe makes. I added cucumbers and cherry tomatoes. It is very light a refreshing but I don't think my husband will like it.

Jay's Signature Pizza Crust

Made the crust as directed. Baked on pizza stone for 10 minutes prior to putting on the toppings. Baked loaded pizza for 20 minutes. The cheese was starting to blacken and the crust was "wilty" in the middle. Not the crust we are use to that you can pick up and eat with one hand!

Sloppy Joes II

I used 8ozs lean ground turkey and an orange pepper. Everything else as written. These are the best sloppy joes and are so easy to make. Why would anyone buy that stuff in the can?

Lemon Mushroom Herb Chicken

This had a great flavor. You can taste the lemon but it wasn't overpowering. I did not use the lemon zest, capers or the whole cup of flour. Just dusted the chicken with the flour and added all the seasonings to the soup mixture and poured over the chicken. Served over brown rice. Next time will cut chicken into strips because I don't like "big bulky bites" of chicken breast.

White Bean 'n' Ham Soup

Very good soup! I used 3 diced carrots, 3 ribs of celery, 3 minced cloves of garlic, 1T parsley. Used no butter or salt. I used a can of chicken broth and water to make 2 1/4 cups. Didn't cook anything just threw it into the crock pot on low. Didn't mash any beans. My husband put hot sauce in his. A real keeper for sure.

Hamburger Steak with Onions and Gravy

Quick Pickled Eggs and Beets

My husband had pickled beets before but not pickled eggs. He wasn't quite sure about the purple eggs. I only added a pinch of the cinnamon and you can still really taste it. Next time I'll leave it out completely. Oh, he loves purple eggs now!
