Maple Salmon

This recipe is so easy and so good. I used reduced sodium soy sauce and very little garlic salt. The next time, I might try honey in place of maple syrup.

Mexican Sour Cream Rice

I used brown rice, rotel tomatoes w/green chile peppers, black beans, sharp cheddar cheese and dried cilantro. Made all on the stove top. No need to heat the oven. Great side dish.

World's Best Lasagna

This recipe does take some time to prepare but is so worth it. I left out the sausage and reduced the sugar and salt. I made a batch in my 8x8 pan. Now I have 2 2-cup canning jars with the left over sauce for later. Very cost effective with how many meals you get out of this gem.

Simply Guacamole

I only had 1 ripe avocado so I scaled this down. Made as directed but added some hot sauce. Next time I'm going to add diced tomatoes. Almost too easy to make this great recipe.

As is this was not bad. I used 1 already cooked frozen chicken breast and added garlic powder and more cumin. Next time I'm going to add onion and red peppers. Now I have another great lunch option.

Gold Fever Chicken Wing Sauce

I realized I was out of honey mustard so I made the "yummy honey mustard dipping sauce" from this site. Hubby grilled some chicken legs and this sauce was perfect.

I was making the "gold fever chicken wing sauce" when I realized I was out of honey mustard. Came across this and thought why not try it. I used "light" real mayo and it came out perfect.

Secret Burger Sauce

Chuck Wagon Hash

Not terrible but not great either. I used "homemade chicken broth" from this site in place of the beef broth. I always use brown rice. I upped the garlic powder and decreased the oregano (our personal preference). Next time, I'll toss in some green pepper (or red) and replace the cheddar cheese with velveeta. There is real potential here.

Mushroom Port Wine Sauce

I was searching the web site for a topper to our grilled steaks. Came across this gem. I didn't have port wine so I used dry white wine. I think any kind of wine will do. Next time, I'm going to reduce the mustard in half. This would also go great on top of mashed potatoes. Thanks for this keeper!

Cool Summer Cucumber and Tomato Toss

This is very easy to put together. It is light and refreshing and not too vinegary. The only thing I did different was to add a cut up onion. Will be making again for sure.

Garlic Linguine

This was actually quite good. I did use an un-drained can of Rotel tomatoes with green chilies in place of the chopped tomatoes. Our house likes food with a little kick. Next time, I will reduce the seasonings a bit, but not much. Topped with parmesan cheese.

Fresh Peach Cobbler I

Made this directly as written. The pie filling was awesome. The cobbler portion was like eating a biscuit. Too thick and "doughy". I will use the pie filling portion again for sure.

Honey Roasted Red Potatoes

These weren't bad or great, just okay. I added more onion than called for. I baked covered for 30 minutes then un-covered for an additional 20 minutes. They weren't crunchy but could have been in the oven for another 10 minutes. Everyone sprinkled garlic powder once on their plates. It still was missing something.

Potluck Special

This was actually very good. It tasted like a cross between stuffed cabbage rolls and stuffed green peppers. I did not put in the oven because it is 100 degrees here in St. Louis Missouri. I just let it sit on the stove top and simmer for about 30 minutes. The sauerkraut was a little crunchy which gave it a nice texture. Will make again for sure.

Easy Raspberry Vinaigrette Dressing

I cut this recipe in half to try it. I used seedless/sugar free raspberry preserves and no salt. This had the right amount of tangy-ness. Went great with my grilled chicken salad. Now I'm making another batch for lunch tomorrow. It does start to separate so really mix well before serving.

Sunday Best Fruit Salad

I made this today for a wedding shower. I doubled the recipe except for the peach pie filling. Everyone went crazy for this. This took some time cutting and chopping up the fruit but was well worth it. No one could guess the secret ingredient. :)

Mini Cheesecakes

I used mini vanilla wafers (left whole) in the bottom of each liner. I topped ours with crushed toffee bites on half and the other half with cherry pie filling. Took these to a wedding shower this afternoon and 5 people asked for the recipe. So easy to make and so good.

Maria's Cucumber Salad

I'm always searching for light sides for our meals and to take in my lunches. I had 1 cucumber to use to I thought I'd give this one a try. First of all it is very salty (too salty for my taste). Second, there was no big WOW factor here. Will not be making this one again.
