Double Quick Dinner Rolls

These rolls were so good and very easy to make. They were very sticky so I used two spoons to get it into the muffin pan. This recipe is so versatile. Definitely a keeper for sure.

Easiest, Amazing Guacamole

I used 1 ripe avocado, 1/4 tsp lime juice and 1/8 tsp garlic salt. It was gone in record time. Will make again for sure.

The Perfect Marinade

Didn't think the sesame seeds were needed so I left them out. Made everything else as directed. 3 out of 4 thought this was the perfect marinade. I thought it was too lemony. Next time cutting the lemon in half. I also used light dressing and reduced sodium soy sauce. Very tender chicken kabobs.

Simple Coffee Drink

Made this today with skim milk, 1 packet of equal and coffee from our Keurig coffee maker. Served over ice. The possibilities are endless with this one. What a quick coffee on the go recipe.

Creamy Chicken With Pasta and Broccoli

This recipe was so good and loved by everyone in my family. Very adult and kid friendly recipe. I sprayed the skillet with PAM instead of using the butter/margarine. My daughter is already asking when I'm making this one again.

Chipotle Blue Cheese Dip

Whoa Nellie this is spicy. I cut the recipe in half just to try it. It was great on chips and my ham and cheese sandrich. Can't wait to try it with veggies. I'm going to try this one with ranch dressing next.

Smashed Cauliflower

Just me and hubby for dinner so I cut this down. Used fat free, reduced sodium chicken broth 2 cups. Added in some minced onions and simmered for 15 mins. Strained the cauliflower and mashed. Added sharp cheddar cheese and parm cheese. Forgot the butter but it didn't need it. Added pepper but zero salt. Perfect side dish for the potato alternative!

Aaron's Missouri Burger

These burgers were the best! I did cut down on the crushed red pepper (daughter is not a fan of too spicy). Used "Margaret's Honey Mustard" from this site and American cheese. These were so good I just topped mine with red onion.

I cut this down to make 1 serving (1/4 cup). You can play around with this one to make to your liking. Used this in "Aaron's Missouri Burgers" from this site. Great recipe.

Breaded Pork Chops

Made this recipe as directed. For 4 pork chops I needed almost a whole cup of bread crumbs. This was pretty bland but very crunchy. I baked ours at 350 degrees for 35 minutes.

Pizza Rolls

These were actually a lot of fun to make. Good family quality time. I used the "easy pizza sauce III" from this site. My oil was way to hot on the first batch so those went into the trash "my fault". My daughter quickly gobbled up the remaining ones and is asking when I'm making them again.

Quick and Easy Peanut Butter Oatmeal

Made this for breakfast today. Didn't add the salt or egg whites. Used about 1 cup 1% milk not the water. Next time I'm using natural peanut butter and adding a banana. This makes a large bowl of oatmeal.

Hawaiian Baked Chicken

This has a surprisingly good flavor with my modifications. Used 3 chicken breasts, diced pineapple, 2T dry white wine, 2T spicy brown mustard, 1 tsp garlic powder, 2T reduced sodium soy sauce, 1T honey and 2T butter. Was disappointed with the runny-ness. Next time I'm adding corn starch to help thicken. Very juicy chicken.

Amazing Whole Wheat Pizza Crust

Made as directed and this pizza crust is very good. I rolled ours out very thin and it held all of our toppings and the taste was very good. Paired this with "Essanaye's Pizza Sauce" from this site. We got 2 large pies and everyone (our neighbors too) were very pleased. Will be making again for sure.

Lemon Poppyseed Dressing

I literally put this recipe together in 5 minutes. I did up the Dijon mustard and honey to 1T each. I only used 1T poppy seeds and very little salt. I did not have grapeseed oil so I used evoo. This was so good that I can't wait to have it again tomorrow after all the ingredients meld together. Thanks for the "great" and easy dressing.

Black-Eyed Pea Gumbo

This recipe has all the ingredients that I love so I had to try it. I'm always looking for healthy, low sodium and low fat soups that taste great for my lunch. To make this more of a soup I used 32 ozs fat free, reduced sodium chicken broth. I ouny had 2 cans of black eyed peas on hand. I used no salt diced tomatoes and "hot" Rotel. Near the end of simmering I added 2 bay leaves and 1/4 cup dried parsley. Even with the added chicken broth this still came out thick. A bowl of this soup, piece of fruit and a big glass of ice water and you have a perfect lunch.
