Quinoa Vegetable Salad

Wow! I've had quinoa in the past - prepared very well and prepared very badly. This is the most flavorful recipe I've tasted. It was my first time cooking quinoa myself, and I was surprised at how easy it was. Don't forget to rinse it!

Crustless Spinach Quiche

This quiche was perfect for Mother's Day! My family is trying to watch our carbs and sugar so it was great to have a quiche that didn't really need a crust to make it spectacular. I almost opted for a different cheese instead of the Muenster but went with it anyway and it really tasted amazing. Definitely adding this to my favorites.

Fruit Salad in Seconds

This was an excellent fruit salad, and the yogurt really rounds out the flavors. I used strawberry yogurt, and I think next time I'll use the lemon as suggested. :)

Lamb Chops with Balsamic Reduction

These came out perfectly! Did end up cooking the reduction a bit too long and it came out more like a chutney but it was delicious on top of the chops. Next time I'm doubling the recipe for 4.

Slow Cooker Cocktail Smokies

I like to use the turkey links instead of the regular beef smokies. Nearly half the calories and they taste wonderful. If I'm taking it to a bigger party, I'll use half beef half turkey. Mmm mmm mmm!

Turkey Bake with Whole Wheat Pasta

I love this concept; I used regular whole-milk dairy products and sprinkled more mozzarella on top before throwing it in the oven. Also, I used a 24-oz. jar of sauce -- I think 13 oz. would be way too dry.

Pistachio Pudding Cake

I love this cake! I think next time I'll add finely chopped pistachios to the batter, but it's great without them. Perfectly moist but not to the point where it falls apart.

Four-Bean Taco Chili

Excellent chili! Made this for Father's Day yesterday and he said it was perfect and I'd give Wendy's chili a run for their money (he's a dedicated Wendy's chili fan). I followed the recipe to a T, using medium salsa. It wasn't too spicy but had enough kick for everyone. I almost subbed an extra can of black beans for the butter beans but I'm glad I didn't. The variety made it a very interesting chili experience. Came together just in time and was extremely easy... (almost like a open-and-dump soup, but you DO drain/rinse the beans :P) Only reason I gave it 4 stars is because although it was fast, I like my chilis to simmer a bit longer so the flavors can mingle. Had a bit of the leftover chili over some scrambled eggs this morning and it was divine!

Fresh Broccoli Salad

Wow, this salad is SO delicious. All of the flavors stand out and yet mingle deliciously. Letting the salad sit in the fridge overnight really helps tone down the onion's potency. I used turkey bacon and chopped walnuts, and this is by far the best broccoli salad I've had! Thumbs way up!

Angel Biscuits II

I've always been nervous to use yeast, and this is the first recipe I've used including it. Wow! They came out perfectly, and refrigerated biscuits cannot compare. It's a keeper!

Carrot Pineapple Cake I

This cake was amazing! I made it in a bundt pan and took it to work on Easter. By the end of the night not a crumb was left. One person stated it was the best cake they've ever had and that he could eat it every day for the rest of his life. Perfectly moist and not too sweet. I will never use another carrot cake recipe.

Baked Soy Lemon Chops

These chops were phenomenal! I only marinated mine for about 3 hours and they tasted like they had been soaking up the goodness overnight. Well-seasoned and flavorful! Took the suggestion and paired them with feta-herbed-mashed potatoes and a light romaine salad and it was a hit!

Classic Peanut Butter Cookies

I kept the ingredients the same, had to bake the cookies an extra minute. (My oven isn't really up to par on heating things well.) They were amazing! My secret? Nonstick cookie pans and parchment paper.
