Cocktail Meatballs

This is the 1st time I ever attempted meatballs and I really loved these. The sauce was really good. Tripled the recipe and took them to a baby shower. I had very little left over and had some requests for the recipe. The funny thing is, the entire time I was adding the sauce ingredients, I kept wrinkling my nose and thinking "this can't be good". I mean, cranberry sauce, chili sauce & lemon juice. Wow. But it was very good. I actually made these the day before I needed them. I baked the meatballs on a broiler pan so the grease would drip down and not pool around the meatballs. I then just placed them in a container, poured the sauce over them, put a lid on them and threw them in the fridge. The next morning at 8am, I dumped it all in the slow cooker to heat before the 1:00 baby shower. Perfect. The only change I made was adding a bit more minced onions and the bread crumbs were Italian flavored. That little bit of flavor didn't overwhelm the sauce at all.

Spicy Bean Salsa

I would rate this a 4.5 only because I'm not a fan of Italian dressing or bell peppers. My husband, who loves both, really liked this as did a lot of the guests at the baby shower I took it to. I doubled the recipe and had plenty of left overs and people were taking big cup fulls home with them. Because I don't like Italian dressing, I made the following changes: 1/4 c Italian dressing 1/4 c olive oil Little lemon juice Little lime juice 2 sprigs of cilantro Plus I used real tomatoes as I didn't think canned tomatoes would be as good as fresh.

Easy Slow Cooker Chicken Wings

I rated this a 4 because of the changes I made to how I cooked the wings first. I made the sauce exactly as was stated and it was really good (not the best, but really good and definitely worth making again). For the wings, we baked them first, then I brushed some of the sauce on them and broiled them. Then I flipped them over and did the same for the other side. After broiling, we then put them in the slow cooker with the rest of the sauce. Fantastic. The meat was super tender but since they were baked & broiled first, the meat pretty much stayed on the bone enough to get them to the plate. Precooking them got rid of the excess fat and kept the sauce from getting watery.

Colossal Caramel Apple Trifle

Sour Cream and Chive Mashed Potatoes

I LOVE this. I will never eat plain mashed potatoes again. I did take others advice and sauteed the chives in butter, then added it to the potatoes. I didn't want anything "crunchy" in my mashed potatoes other than the lumps...I love the lumps. Thanks for the recipe.

Artichoke Chicken

My husband gave this a 5. I gave it a 3 so it came out a 4. I'm not a fan of parmesan cheese at all. I was hoping everything else would drown out the taste but it didn't. This would be sooo good if I didn't use the parmesan cheese. Next time I will try Mozzarella chesse instead of parmesan. I did take others advice & use 1/2 mayo & 1/2 sour cream. The sauce was to die for. I also took others advise & used the marinated artichokes and I don't think I will use them again. Tasted too much like Italian dressing it was marinated in & I'm not a fan of that either. So next time I make this, I will stick to the recipe but swap the parmesan cheese out with moss. cheese. Thanks so much for the recipe. Those who like the marinated artichokes & parmesan cheese must like real Italian food because that is what it tasted like.

Bacon for the Family or a Crowd

I use this method & pan frying depending on the mood I'm in. Baking it in the oven is the perfect way to get nice, evenly cooked, straight bacon. You can fit more on a cookie sheet than in a skillet. When pan frying, you almost always have big pieces of fat that get picked off & thrown away. In the oven, it all gets nice & crispy & edible.

Libby's® Pumpkin Roll with Cream Cheese Filling

This is the recipe I have used for years, ripped out of a magazine. I would give it 10 stars if I could. I don't waste time making it into a roll. I double the batch, bake it as a cake in a 9x11 dish and top it with the icing/filling. It saves a lot of time & effort not to have to roll it. It may not be as attractive but it tastes the same. I then sprinkle the walnuts on top of the icing.

Jackie's Sausage Soup

What a surprise this ended up being. I made it for my husband who loves peppers, onions & polish sausage. I used polish sausage instead of sweet italian sausage and I double all ingredients except the broth. I used 12 cups of broth instead of 16. I don't like peppers but the broth tastes so good that I had to try it and I have to say that I loved it. The more I ate the addicting it became. This is deffinately a keeper. Only complaint my husband gave it I need to add more polish sausage. Another tip...would also be good with chicken or both chicken & sausage. Thanks for the recipe.

Pretzel Salad

Unless you like an extremely salty crust, I think this would be better with something other than pretzels or use pretzels with no salt. The one & only time I have/will try this the extremely salty crust clashed with the wonderful topping that I ate & ended up leaving the crust on my plate.

Pretzel Salad II

I finally got to try this after everyone kept raving on how good it was & I wasn't impressed. The toppings are extremely good but the pretzel crust was extremely salty. With the crust being so salty, it clashed with the topping. I would love this with something other than pretzels.

Watergate Salad

I accidently made this not knowing it had a name. I made the regular fruit salad with cool whip (fruit cocktail, mandarin oranges, bananas, etc) and had a box of pistachio pudding that I decided to throw in & try it. I only used 1/2 of a small box & it gave it the perfect flavor (not too strong). It went great with all the fruit too. This is a great recipe that you can change up & add anything you want (including nuts, marshmallows, etc).

Restaurant-Style Hashbrown Casserole

I just love these. Coudn't believe it when I first tried it. My son didn't like the sour cream taste, but that was ok, more for me and my husband. I could barely taste the sour cream myself.

Buckeyes I

Everyone just loves these things. In fact, I have family giving me tins to fill for them, before I even start making them. However, my recipe calls for 1/3 bar of parafin wax. It makes the chocolate smoother and keeps it from clumping. You can't taste the parafin. They look sooo pretty. I freeze my "balls" before dipping. It hardens the choc on them faster and keeps the balls from falling off the toothpicks. I learned how to make these as a child and have been making them every year since.

Grilled Shrimp Scampi

This was good but I think I'd like a different sauce and broil it instead of grill it and make it more like Red Lobster. This was very easy to make and I just through the shrimp on the George Foreman Grill. Took a minute to cook.

Pizza Casserole
