Chicken Enchiladas with Creamy Green Chile Sauce

I wish I would have listened to the other bad reviews. I made it exactly as listed. It was absolutely bland. No flavor at all and I even added a fresh jalapeño with the chiles. We took one bite and stared at each other with the "yuck" face. My husband and I still ate it but added a ton of salsa on top. My eight year old told me right away they were terrible and did not want to eat it. The only one who ate it with a little bit of enjoyment was my three year old. I thought I would try something new but only found disappointment.

Roasted Pork Loin

I made this tonight for dinner. It was very delicious. I used fresh rosemary and thyme from the garden in combination with the garlic. I did brown the roast and then stuffed the herbs in the meat slits and on the outside afterward. Turned out very good. Oh, I also laid sliced yellow onions under the roast while it was in the oven. As far as the sauce...not so much. I did not have white wine so I used chicken stock but could not get it thickened. Pretty sure it was an error on my part. I will make this recipe and try again! Served with roasted garlic potatoes.

Pumpkin Bread IV

I have made this two times now. The first time I substituted a half a cup of oil w/ apple sauce. It was soo delicious! Two loafs went to work with my hubs and they loooved it! The second time I substituted a majority of the oil with apple sauce. Not a fan!!!! I know its healthier but it was just not good. My husband did not even want want to take it to work for the guys. Actually most of it got thrown out. I would not suggest making it this way. I know its healthier but it is also not good. Both times I sprinkled the bread with sanding sugar and that gives it a pretty look and an extra yum!

Jimmy Dean Sausage Stuffing

Turned out very good but as other reviews stated..IT MAKES A TON! I used one pound of sage sausage and one pound of regular jimmy dean. Very good and husband ate on it for several days after thanksgiving. I also did not add the spinach...forgot to buy it. And we did not stuff our bird. Enjoy!

Sugar Cookie Icing

I did not think the amounts in the recipe were correct. I had to add way more milk and corn syrup. The end result was good but it was a big guessing game to get the correct consistency.

Super Sausage Gravy

This turned out pretty good. Definitely more liquid next time. It turned out to thick for our liking. I will definitely be making again but with a few changes. Update: 12/25/12 I made this for breakfast this morning. I doubled the milk and flour this time. I think it turned out too milky. Nextime I am going to just cut down the flour in the original recipe. I know Iwill get this down to a "T" next time!

Apple Crisp II

This was delicious! We all loved it! :) I did not peel the apples and used a combo of red delicious and granny apple. We topped it with homemade whipped cream. The only thing I would change is maybe cut down the sugar a bit. I think it would still taste great and be a bit healthier!

Chai Tea Mix

This is was not flavorful enough for me. I would def suggest a coffee grinder for the spices. I did not use one. The blender used did not grind up find enough and that possibly led to lack of flavor. When mixed with water, all of the spices came to the top. I will not be making this again.

Judy's Strawberry Pretzel Salad

This was pretty good. Not our fam favorite but I brought it to a friends house and they loved it! I would make sure you plan on eating it the same day. Leftovers did not hold up and got soggy.

Debdoozie's Blue Ribbon Chili

This chili was delicious! I used the hot salsa and it did have quite a kick to it. I had to add some extra beans to counter balance. We topped it with sour cream, onions and cheese. Served it with cornbread. I will definetly be making this recipe again!!!

Cheese's Baked Macaroni and Cheese

I made this for dinner tonight but had a few changes. I cut down the butter a bit..seemed like a lot of butter. Also, added fresh minced garlic with the onions. Then, added dry mustard with the s and p. I did not have sausage so substituted bacon and had sharp cheddar, fontina and Jack cheese on hand so used them all. Made my own bread crumbs but did not use a cup, I think a cup would have been way to much.

Super Al's Cocktail Sauce

Very good and so simple to make. I used lemon juice out of the bottle and it still turned out great! LOVE IT! Never made it before. Just a note...when you buy horseradish in the store...make sure you buy it nice and white, no brown spots. :) I will be saving this recipe and making it again very soon!

Country Scalloped Potatoes

This passed the test! Everyone loved it! We used leftover Christmas ham and it worked well. I did add an additional 2 potatos to the batch and am glad I did. It would have been very moist without them. I used a mandoline to cut all of the potatos in uniform slices so my dish cooked in the exact time as listed. The only thing I would do different is dice my onions instead of chop...some of the onions were a little crunchy. This will go into the keeper pile! Enjoy!

Simple Herb Rice

The rice was pretty good. put it in the rice cooker and was done in no time. Kind of tastes like Rice a Roni. It worked with the Pampered chef 30 minute chicken recipe.

Cut-Out Cookies in a Flower Pot

Not impressed at all. This cookie has such high ratings so I expected an amazing cookie. I made the dough last night and its been sitting in the fridge until this morning. The dough was easy to work with and roll out. I didn't think the dough was very flavorful though but was excited to see what the cookies would taste like. Well...they are just coming out of the oven now and are a mess! They do not have a lot of flavor, they are sticking to my cookie stones (which I have never had a problem with before!). I took another reviewers advice and rolled them with powdered sugar--maybe that was the problem? I have never done that before! Right now i have some in the oven that I scooped with a cookie scoop. We will see how these turn out. I needed these cookies for a girl scout event today so i am very dissapointed!!! Update: I just took the scoop cookies out of the oven and pressed them with lots of sugar...they still don't have flavor. This time I did not use powdered suar. So, I am changing this rating to 1 star. These cookies were a waste of ingredients and now I have to figure out something else for girl scouts!!!

Gourmet Sweet Potato Classic

These sweet potatos were delicious! I only had three large sweet potatos so I cut the recipe in half. I baked them in the oven and once soft the skins just peeled right off. We all really enjoyed these sweet potatos and I will be making them again!
