Oil Cookies

Reviewed: Jun. 8, 2010
SO good! They turn out with a taste and consistency close to that of scones. They are so fun to make shapes out of! Great group activity for baking with friends or kids because you can make whatever shapes you want out of the dough (and there is a LOT of dough, so the help would be nice!). I only gave it 4 of 5 stars because I made a few adjustments, and I think as-is it would only be a 4. What I did that made them GREAT was: 1) I added about 1/2 a tablespoon of almond extract along with the vanilla. 2) I ended up having to add in about 1.5 extra cups of flour... it was still a little sticky, but with floured hands, it was workable/rollable for shapes. 3) GLAZE! You definately need to take the advice in the recipe and glaze. The cookies are a bit bland by themselves, but made complete with a little sugary goodness on top :) I used a vanilla glaze, and it was the perfect pair, but I bet they would be great with any other glaze, or even jam! Thanks so much for this recipe, I'll definately make it again :)

Spicy Red Bell Pepper Soup

Reviewed: Aug. 19, 2010
I really enjoyed making this soup! Pretty alright as-is, nice flavors, but it's missing something (I don't know what! But I've been trying to figure it out all day.). Helpful additions were: lime and lemon juice, extra garlic powder, and dried basil - t hese additions made it a lot better for me. But it's still missing something I can't quite put my finger on. I think some shredded chicken, corn, or beans might help the flavor. Thanks for the recipe, it's nice to find one using fresh bell pepper.

Peach Cobbler V

Reviewed: Aug. 13, 2010
Pretty good! I followed the recipe except I used about 3 or 4 cups of fresh peaches, and let them sit with 1/4 cup of sugar, a couple dashes of cinnamon, and about a teaspoon of almond extract for about 10 minutes before adding them in to make sure the peaches had good flavor (and they did!!). The batter didn't quite set well, but the top of it looked close to burning so I removed it from the oven - I'll cover it with foil next time to help with that.

Walnut Baklava

Reviewed: Apr. 27, 2010
Wonderful recipe! Just made it this evening with a few friends. Super easy, and delicious! This is the first time I've ever used phyllo dough, and I was so happy with the result. I don't like lemon in sweets so I left out the lemon juice and reduced the sugar in the syrup by 1/4 of a cup and it turned out beautifully :)

Resurrection Rolls

These are so wonderful! I used another reviewer's suggestion of baking in muffin tins so that they stay together, and it worked pretty well. Perfect Easter treat :)

Vinaigrette

Delicious! Learned the hard way that it separates and the will will harden within a couple days if you don't have it in a container with a tight-fitting lid!

Butterscotch Lace Cookies

Reviewed: Aug. 19, 2010
Pretty good cookie! Very delicate and candy-like. I wouldn't recommend making them in a case where they have to be transported, as they are thin and break easily. They're nice crumbled over ice cream or yogurt or served whole with coffee or tea for dessert.

Butter Flaky Pie Crust

Reviewed: Aug. 13, 2010
SO wonderful, thanks so much! Beautiful flavor, and the lattice I put on my pie stayed perfectly through baking, and looked so pretty with a little egg wash and sugar sprinkled on top. I overworked it and accidentally added a little more water than called for, so it was a ittle tough in some spots - be careful only to use a little water, and I wouldn't worry about making it into a ball - just get the water in it and stick it in the fridge however it ends up, just to prevent doing too much with it. I will certainly make this again!

Chocolate Mousse

This was spectacular! Thank you for this wonderful recipe. Rich, decadent, not too sweet, and it is so great that there are no raw eggs. Thank you also to other reviewers for the reminder to chill the bowl and beaters beforewhipping the cream. I'll be making this again for sure!

Cream Cheese Squares

Reviewed: May 17, 2010
SO Good!! I had about 4 ounces short of 2 packages worth of cream cheese, but it still turned out well. Made them in mini muffin tins like anotehr reviewer suggested and they came out as adorable "cheesecake rounds." The 1/2 cup of margarine is unnecessary in my opinion, I just brushed a little bit of melted margarine on the tops of each round and saved some fat and calories (I maybe used 1.5-2 tablespoons of margarine)

Caramels

Reviewed: Mar. 13, 2010
Wonderful, wonderful recipe! I've made it a couple of times and I will make it over and over again, they get rave reviews! My friends often just mention off hand how great these caramels were. A couple suggestions: Don't go all the way to 250 -, it makes them a little too hard (though they soften up in a few days and are better). They turned out best when I went to about 247. Also, to prevent sticking, line your pan with foil and butter the foil - this has worked best for me. Also be prepared for some hard work in cutting them! It takes a bit of effort!

Bechamel Sauce

Reviewed: Mar. 13, 2010
Great recipe! I've made it a couple of times and it's turned out great both times. I never have half-and-half, so I use 1/2 c. heavy cream and 1/2 c. skim milk and it turns out wonderfully. I also use black pepper instead of white. Last time I added in some red bell pepper and red onion I cooked with no oil on a nonstick skillet, and it turned out very pretty and tasted great!

Old German Honey Cookies

Reviewed: Aug. 13, 2010
These were nice and moist, but just didn't have that great of a flavor for me, and kind of turned out seeming like pancakes (very thin). I was glad for the way to use up my honey, but I don't think I would make these again.

Peach Cream Pie I

Reviewed: Aug. 13, 2010
This pie was good, but not great. I think it would be much improved by letting the peaches sit with some sugar and cinnamon and/or vanilla before hand, just to give the whole thing more flavor. The texture and sweetness was fine for me, but if I make it again I'll add either more vanilla, cinnamon, or nutmeg... just something else to make it more special.

Mango Lassi II

Reviewed: May 29, 2010
Great! I've never had it before so I have nothing to compare it to, but I think it's delicious. I used less yogurt than called for because I wanted to use greek nonfat vanilla yogurt. My suggestions: Less sugar (I liked it when I used agave nectar, only about a tablespoon per serving), and some lime juice make it super great!

Strawberry Muffins

Reviewed: Apr. 14, 2010
Great recipe! I only gave it 4 stars instead of 5 because I added vanilla and cinnamon like other reviewers suggested. I also subbed 1/2 of the canola oil for browned butter to give it a richer flavor. so they're DELICIOUS, but not exactly the original recipe. I doubled the recipe and got about 70 mini muffins. FYI, if you're doing mini muffins, they only bake for about 15 minutes. Also, a little cinnamon sugar sprinkled on top adds a nice touch :)

Great recipe! I used fat-free 1/2 and 1/2 instead of the heavy cream to cut on some fat and it was still wonderful! Also made delicious leftovers! Thanks for a great recipe.
