Chicken and Peppers with Balsamic Vinegar

this was pretty good. i didn't have many peppers(1/2 for 1 chicken breast) but it was good anyway. i gave 4 stars 'cause i do think it needs some salt, or as other said they added soy sauce, but it needs a little salt kick either way.

Black Bean Chili

i made this today but it was a little too spicy for me. i omited the jalapeno pepper from the start, but did add(and i did teaspoon, not tablespoon) of red cayane pepper rather then the chili powder. that's all i had so maybe that was my fault to think i could replace it. anyway, i had to add more beans, another tomato and about another 3/4cup of chicken broth to make it bearable for my tastebuds. overall though i really liked it and would definetly make again, without the spice. one of my faves, and it's the first time i made chili.

Old Fashioned Coconut Cream Pie

waaaaay too sweet and i didn't even add the cream on top! and i was so excited about it too, what a disappointment. can't imagine anyone eating a whole slice, not to mention diabetics and kids(imagine the sugar rush, wow!). i thought it may have been my mistake for using sweetened coconut but it wasn't. not worth the calories, i won't go by only good ratings from now on.

Curry Kabobs

this was pretty good. marinated 2hrs and did the whole chicken breast rather than cubed pieces. i added some salt, too. decent, yet the bf who's indian said it didn't compare. for ppl like me who don't know the difference i think it's rather good. :D. oh and i did mine on the george foreman grill.

Grilled Lemon Chicken

the marinade was really good. i made both chicken tenders and chicken thighs in my forman grill. i let marinade for about two hours, but still found that the flavor didn't quite penetrate all the way through. i brushed w/ marinade while cooking as well, i think next time i will try to leave it in for 24hrs. i sprinkled left over marinade once served, and put it on my vegetables as well as potatoes i grilled w/ this. oh, and i omited the mustard 'cause i didn't have any and added a small amount of spicy mustard instead. sooo good!! 4 stars because i think it either needs more time to marinade and/or needs some extra sauce to serve on the side.

Tater-Dipped Eggplant

i give it 3 stars 'cause frankly the bad outcome might have been my fault. i didn't measure the pepper and added way too much, the same w/ the salt so it came out inedible. it was a large eggplant too and i was excited to try it 'cause all the rave reviews. i tried 1 peice, it looked appetizing enough and smelled good, but due to the salt/pepper i couldn't really enjoy the taste. had to throw out. it's the first time i've thrown out anything. ever. :(

Quick and Easy Chicken

made it yesterday, it was all right. i just hate how much sugar the recipe calls for(sugar/salt overdose imo). of course most things that taste awesome aren't the healthiest.... i'll probably make this once in a while tho, pretty easy/great tasting for those busy work days. i also cubed my chicken and added peas when almost done. served w/ white rice = win.

Hearty Split Pea Soup

this was pretty good, i'd make it again. i used all ingredients and exact measurements, but had to leave it cooking while at work(i work nightime) so did it on low for about 9.5hrs. it looked/smelled pretty awesome, but since it was meant for lunch(i got home at 7) i just turned off and took a nap. by the time i woke up it had dried out and crusted over, so i had to add water and salt. still, only got it to a thick goo consistency, otherwise i would risk deluding too much. maybe next time i'll use more liquid as some mentioned.

Eggplant Mixed Grill

it wasn't that great for me. the eggplant came out looking pretty unapetizing, all though it was the yummiest since it absorved the liquid. still, didn't wow me. personally i'd preffer it simple w/ plain salt and pepper.

Roast Leg of Lamb with Rosemary

This was pretty good, but a little on the sweet side for my taste. Maybe it was that i grilled this on the George Forman grill using a cubed leg of lamb so it kind of glazed over making a sort of honey crust. I even added a splash of lemon juice and vinegar since i had them handy. Still, it was delicious. I made it w/ spanish rice and salad, which is probably why it tasted even sweeter(the rice was salty in comparison). Next time i'll make this w/ white rice or potatoes maybe so it really stands out. Still, yummy. :D

Quick Chicken Soup

it's a very good standard recipe. i actually never used bought broth of any kind before, but i was surprised, it was quite tasty. i made it for my bf 'cause he got his wisdom teeth pulled and couldn't really chew. i had cabbage so added that in first and let cook for about 20mins. then i put in celery, frozen veggies(carrot/beans/peas/corn mix, so easy) and a handful of pasta. i let it cook for about an hr. everything was overcooked and falling apart, but i did that on purpose so the bf could eat it. i did add maybe 1/3 of water though 'cause the broth got soaked in/evaporated w/ time. very good all in all.

this was sooo good! i wasn't expecting it either. i'd call it watery chili, still it tasted pretty delicious. i'll definitely make it again, and cut back on the liquid. didn't even need any garnish for this.

Honey Mustard Grilled Chicken

this was allright. made it on the george foreman grill and the sauce burned before the chicken was done, which was a downer. don't try it on the grill unless you can turn it down to mid temp. the taste was nice, don't think it really marinated that well either(left mine for 2hrs). definetly needed the extra sauce on the side

Chicken and Broccoli Pasta

this was sooo good! i did everything as in the recepie but used 4 romane(sp) tomatoes, 2chicken breasts and didn't have onion/garlic so used powdered. i also added oregano, basil and parsley(more than called for, idk how much. just eyed it 'till it 'looked good' lol) and at the end a dash of adobo. i also cooked and simmered w/ chicken broth for idk 15mins and added the broccoli at the last 5 or so. served w/ spaghetti. too good! and fyi you really have to taste for the salt since my broth also had some. i tossed w/ the paste before serving and didn't add salt to the pasta water.

Corn and Black Bean Salad

wasn't so great. the vinegar was way to acidic for me, even if added more corn and half a can of beans(had extra from another recipe). i found it didn't really taste like much even when i marinated overnight so had to re-mix before serving(hence the dressing being too acidic). won't try this again.

Mediterranean Lemon Chicken

this was just OK. nothing special in my book. i used drumsticks and followed recipe, except mantained covered for 40mins and broiled each side for 5mins to brown like others suggested. it was tender yes, but as far as flavor, again nothing special. i would make it again but would add lots more spices and might marinade if i have the time.

i tried this w/ 3 potatoes i had laying around, wanted to use them up before they spoiled and didn't know what else to do w/ them. it was good, yet nothing amazing. i would do this again, if nothing else comes to mind.

Salmon with Lemon and Dill

this is really delicious!!! i already made it twice this week. i followed some of the other suggestions: butter and lemon i did 4tbs each(next time i'll do 2 of olive oil and 2 of butter) and 2 tbs of salt. i also made a little pouch and it was really moist and simply very good. my bf was impressed. i served w/ rice the first time, poured the sauce on top. the second i served w/ steamed veggies and used the extra sauce to toss. it added so much flavor. in one word, delicious. i'm making it for 8ppl tonight, i know they'll love it.
