Mexican Casserole

I had some leftover pico de gallo to use up and used it instead of salsa. We loved this, though we deviated from the basic concept somewhat. Like other reviewers, I modified the ingredients and seasonings to include corn, cumin, cilantro and garlic. I also substitued black beans for refried beans and added ground beef, all of which I simmered while toasting the tortillas, as suggested by another reviewer to avoid a soggy texture. Served with sour cream and heartily enjoyed by the family!

Spanish Rice Bake

Tasty! Reminds me a bit of my stuffed bell pepper filling, but easier and quicker to make. My kids are grown, but I wish we'd had this recipe in our arsenal while they were with us. It's great to have another option for ground beef. I followed the recipe, except I used a 28-oz can of tomatoes, as well as a couple of the tips in other reviews, adding a handful of frozen corn at the same time as the other additions, and browning the ground beef along with a clove of garlic and the onion. I, too, made the entire meal in a cast iron skillet rather than messing with other pots. My husband raved about this and enjoyed seconds as well as taking some for lunch the next day.

Best Big, Fat, Chewy Chocolate Chip Cookie

Yep, these are my new fave! I used a non-stick pan and only baked for 13 minutes, as another reviewer recommended. Three days later, and they are still soft and delicious. I only ended up with 16 and used a 1/4 cup measure for each cookie. But they are big enough to share, so it's all good. I lost my old stand-by recipe and have been trying to find a replacement. Bingo! I just did. Thanks for this, Elizabeth!

Marinade for Chicken

Loved it, you bet! With so many positive reviews, I figured I couldn't go wrong, and I wasn't disappointed! I changed the serving quantity to 8 from 32 and did everything else as was called for (using olive oil), though I did leave out the salt, as some suggested. I marinated three chicken breasts, cut into smaller pieces for kabobs, for close to 6 hours, reserving 1/4 cup for basting on the grill. We brushed it on the veggie skewers too, and everything was delicious. The chicken was remarkably tender. I served this with hazelnut-mushroom pilaf, also on this site. Absolutely fabulous, and it made three generous servings. Definitely a keeper!

Curried Butternut Squash and Pear Soup

Oh yeah, this is delicious! By accident, I used three times more ginger (2 Tbsp instead of 2 tsp) than called for, but it sure didn't hurt this flavourful soup. I'll try it next time with the amount called for and see which I prefer.

Vermicelli Noodle Bowl

This has to rate in the top five meals to come out of my kitchen! I had no idea I could replicate the flavours of my favourite Vietnamese restaurant. I had my heart set on serving this with beef because of the photo, though the recipe calls for grilled shrimp, so I used an 8-oz top sirloin seasoned with garlic salt. I followed the recipe almost exactly, omitting only the radish, basil and mint. I didn't have pickled carrots, so I shaved a carrot thinly, with a potato peeler, to match the size of the matchstick cucumbers. We only abandoned the herbs, which I'd planned to cut from the garden at the last minute, because the assembled plates (wouldn't fit in bowls) looked satisfying already, and we were starving! It was delicious, leaving enough noodles, veggies and garnish to have for lunch the next day. One of the other reviews says this would be delicious without meat, and they are 100 percent correct! I can't wait to make this again. My husband and I can't stop talking about how delicious it was and how unlike anything we've attempted to make at home. Maybe we'll try the grilled shrimp next time.

Old Fashioned Onion Rings

Perfect onion rings - just what I was craving! I doubled the recipe and used christina b's method with the resealable bag and tongs, and I added the seasonings that REDKNIGHTPREZ recommended in the earlier reviews. They were delicious and appreciated all around.

Greek Penne and Chicken

My teen daughter said I could feed her this "every day for the rest of my life"! I sauted a chopped red pepper with the onion and garlic (to use it up, and I didn't have the artichokes). Next time I will add canned diced tomatoes, as my family said it could use more tomatoes. Also, I substituted chopped fresh basil for the parsley. It was delicious and hearty and fed a family of four with leftovers for lunch the next day.

Cheeseburger Soup I

Dee-lishus!! It's rare that I make something my whole family likes. I wish I had doubled this. Everyone wanted seconds. I made it exactly as the recipe states, except I used ground chicken. Mmm-mmm.

Tender Breaded Turkey Cutlets

Too simple and a big hit! I was tempted to modify this. It sounded too simple, so I thought it might be plain. I was looking to disguise the turkey breast cutlets as chicken burgers, so before breading them, I divided the cutlets to fit on the buns. They were certainly moist and flavourful, and the family enjoyed their "chicken" burgers!
