Banana Prune Muffins

I thought these muffins were quite good but not mind-blowingly so. Although they were very moist and tender, they didn't go down a storm with my team of dedicated eaters, and I had to put several uneaten muffins into the bin as a result. (I think it was their passive aggressive way of telling me not to adulterate the sacrosanct banana muffin.)

Spiced Pickled Beets

I've tried more than a handful of pickled beet recipes, but this is the one to which I always return. Like other reviewers before me, however, I do double the whole spices and tuck a cinnamon stick in for good measure.

Melt In Your Mouth Blueberry Cake

I had high hopes for this recipe. Honestly, I really wanted to like it, but I'm sad to say that I didn't. The cake wasn't terrible, but it was a disappointment. For all the time, effort, and blueberries it took to make it, I got a cake that, though readily scarfed down by everyone in question, was described as tasting like blueberry muffin. For less aggravation, save your efforts and make the muffins instead.

Chicken Vicious

I stored this recipe in my inbox a few years ago and occasionally flirted with the idea of trying it, but, until last night, it had remained an unconsumated relationship. More fool me for waiting so long! We really enjoyed this dish - it's earned itself a regular spot in the "Rotation". The only change I made was to reduce the amount of vinegar to 3/4 cup, following the advice of an earlier submitter.

Caribbean Pasta with Shrimp

I'm always looking for new and different ways to prepare shrimp and prawns and I found a "keeper" in this one! I did follow the advice of the reviewers that had boldly gone before me in that I used ground allspice but other than that, I didn't need to tinker with the recipe very much at all.

Nanny's Steamed Cranberry Pudding

I had to steam this well beyond the 2 hours, unfortunately, but I don't think that was due to any fault on the recipe's part. I will make this again but, the next time, I will definitely add more fruit and omit the nutmeg in favour of either more cinnamon or perhaps some mixed spice as I'm not a big fan of nutmeg and I found it a bit dominant in this recipe. In addition, the cranberries, although I had floured them, all migrated to the top of the basin whilst cooking which resulted in a rather uneven distribution of fruit throughout the pudd. As for the sauce, I incorporated a 1/2 cup of double cream right into the sugar mixture before carefully reducing it to the consistency of a hard sauce. The thick, exceedingly rich butterscotch of the sauce complimented the pudding perfectly.

Minced Beef with Black-Eyed Beans

This was absolutely delicious. It tasted even better than it smelled whilst cooking! I've even made it with turkey mince to great results. This one is definitely a keeper.

Apple Coffee Cake With Brown Sugar Sauce

Initially, I had reservations about this recipe. I found that the cake didn't require further baking after 45 minutes, so many thanks to all of you that posted the warnings about cooking times. The cake that emerged from the oven was visually tempting, and its cinnamon-vanilla aroma was pleasantly appealing...but when I served it up for dessert, still warm, with ice cream, it didn't go down a storm. Everyone ate it politely, and there were no overt criticisms but not a one jumped at the chance for seconds or even to take leftovers away with them. Disappointed, I was preparing to offer the remains of the cake to the birds the next morning when I popped a morsel of it in my mouth, and then immediately wondered what had happened to the one that I had baked because the bird fodder I had in hand could not possibly have been it!! It had a gorgeously moist and tender crumb and a crust that was both crisp and caramelly at the same time. So, unless the fairies stole in overnight and substituted slices of their enchanted food for my floury stodge, this cake *clearly* benefits from having a night to rest - as do we all! I shall definitely make this one again - but the next time it will be a "make-ahead" cake for brekkie or brunch.

Greek Chicken

More than the sum of its parts. It's easy to prepare, using ingredients commonly found in the kitchen, it's foolproof - the chicken is moist every time - and it smells absolutely divine whilst cooking. I can't recommend this recipe enough.

Brandied Shrimp with Pasta

Following the advice of previous submitters, (i.e. using de-veined "lazy" prawns, allowing the sauce to reduce before combining with the pasta) this dish turned out spectacularly for me. I shall definitely make this one again!

African Chicken Stew

I received a vigorous nod and a "two thumbs up" from Him Indoors when I asked if I should make this recipe again. I made a few alterations to the original design as advocated by earlier reviewers - adding more veg, using stock rather than water, tossing in some tomato passata, decreasing the amount of peanut butter - all to spectacular results. If you're looking for a rich, spicy dish that gets on famously with red wine, look no further!

Honey Mustard Dressing II

I hate to be the voice of dissent in such an overwhelming chorus of praise, but I really didn't care for this dressing - I found the flavour of the mayonnaise to be VERY overpowering. I was able to salvage it with a few additions, and my husband, none the wiser about its original form, thought it quite pleasant - hence, the 3 stars. I'm terribly sorry; I had such high hopes for this recipe.

Peanut Butter Noodles

When I served this to my husband, he said that it smelled and tasted like a dish from "Wagamama's," a noodle bar in London. To me, there could be no higher praise. This dish was simple, fast, and delicious, and it comes with highest recommendations.

Mushroom Blue Cheese Turkey Burgers

There is simply no better way to make turkey burgers! I was quite dubious about this recipe's success, owing to a personal aversion to blue cheese, but I was stunned, and pleasantly so, by the flavour of these burgers. I'll never settle for a bland, insipid turkey burg again! As for my method, I followed the advice of the other reviewers who incorporated the cheese directly in the meat. I also used tinned mushrooms, which did not seem to diminish or detract from flavour or texture.
