Glazed Corned Beef

My husband said "always make corned beef this way!" This was a most amazing dish, especially since I used an Apricot-Jalapeno preserve. The sweet/hot combo on the corned beef was legendary! This is my new go-to for corned beef!

Cranberry Sauce with Jalapeno Peppers

This recipe rocked with my slight changes: instead of lemon juice I used the zest and juice from one orange, and I didn't have sherry so I used Captain Morgan Tattoo Rum, which is dark and spicy and citrusy. I let the sauce simmer a bit to cook off the alcohol for the kids. It was the most incredible cranberry sauce this family ever had....it was gone in a heartbeat! The chant was "Make More, Mom!" My last tip: DOUBLE THE RECIPE! Always wear gloves when seeding and mincing the jalapenos.

Pizza On The Grill I

We've been grilling pizzas for a year now. I make my dough in my bread machine....I use 2 1/2 cups all-purpose flour and one cup whole wheat flour to pump up the nutrition. I also discovered a tbl. of poppy seed in the dough makes it deliciously chewy and even tastier! We have not had a commercially-prepared pizza...frozen or restaurant...in over a year. Homemade is the healthy way to enjoy pizza! And we make individual pizzas to grill so he can have meat and cheese and I can have a vegan pizza. Everybody's happy!

Annie's Fruit Salsa and Cinnamon Chips

Superior! We love mixed fruit salads and this is an awesome backyard bbq side dish! I didn't have any tortillas on hand, but I did have some wonton wrappers...they baked up nice and crispy and cinnamony....a great substitute for the tortillas!

Bourbon Whipped Cream

Yup, this is the recipe I was looking for...'cept I substituted Capt. Morgan's TATTOO Rum for that unique flavor to fill my cannoli's. The Tattoo Rum has the most INCREDIBLE spicy flavor, unlike Myers or any other dark rum. Give it a try!

Brandied Candied Walnuts

WOW! Made these yesterday, THEY ARE INCREDIBLE! The orange flavor is a refreshing change from the "ordinary" candied walnuts I usually make, and I like the fact these are made in the oven instead of on top of the stove. I'm making more for gifts, Thanks for a real Keeper!

Deviled Chex® Mix

This blend of spices rocks! I used this spice blend with my usual chex mix recipe: Plenty of chex cereals, 1 cup raw cashews, 1 small bag of popped popcorn (kettle corn is awesome in chex mix) and I use melted Smart Balance spread instead of oils or butter. Trying to keep the ingredients as healthy as possible, while still making a mix people oooh and awwwwww over! We leave out the pretzels and cheese crackers....nobody really likes that stuff. This recipe didn't call for cayenne pepper, but I added it anyway so I could reduce the amount of salt by half.

Stuffed Jack-O-Lantern Bell Peppers

What a delighful idea! Made these for Halloween, except I used my own vegan recipe for the stuffing, but the idea to carve the peppers like little jack-o-lanterns is absolutely inspired! Thanks for the spooky idea!!!!

Hogs and Kisses

I've been buying chocolate covered bacon at Marini's Candy Shops in Santa Cruz California, OMG it's a decadent treat so completely delicious and completely wicked, but worth a try now and then. I've made it at home too, it's relatively easy and the main trick is to have REALLY crispy bacon, blot it well after frying and before dipping or brushing on chocolate, and I've found thin-sliced bacon works best, thick-sliced tends to get tough after cooling. At Marini's they make it with both milk chocolate and also DARK chocolate, WOW! Now THAT'S a party in your mouth!

Black Bean and Rice Enchiladas

A new vegan delight for us, I used Las Palmas Enchilada sauce (that's the one my mom always used when I was a kid...ahhh tastes like home...), I add some fresh or frozen corn, and for our vegan sensiblities left out the cheese. Used corn tortillas instead of flour. DELICISIOSO!!!! I found these to freeze and reheat well, so make a bunch for later!

Pizza On The Grill II

I use my bread machine to make a nice whole wheat pizza dough, and I make my own sauce with a handful of roma tomatoes, a red bell pepper, olive oil, some seasonings, and a nice cabernet. Only takes a few minutes. THEN and only then I know we're getting a truly healthy pizza WITHOUT additives and conditioners and stabilizers and SODIUM. Eating whole, clean food is the way to go!

Blueberry Oat Bars

These are perfect! Just a few simple ingredients, of course, I had to tweak it a bit to make it healthier, whole wheat flour, agave instead of sugar, smart balance instead of butter. But for the life of me I can't understand why "Men especially love them"...(kind of a sexist statement) my whole family loved them, guys AND gals!!!!!

Carrot and Ginger Soup

I never had butternut squash soup in my life, neither had my husband. I bought a b-nut squash as part of my new "One New Veggie Every Week" diet, and decided to try this one first...RIGHT CHOICE! I didn't have fresh ginger so I used a nice big piece of crystallized ginger. We liked it with a bit more cinnamon, I mixed in about 1/8 tsp. right b4 serving .... OUTSTANDING! BRAVO!!

Citrus-Ginger Roasted Beets and Carrots

We're trying one new veggie each week. This is the first time I ever bought raw beets, I tried this recipe, WOW!!! I didn't have grapefruit or lemon juice, so I subbed orange juice and key lime juice. My husband (who was very skeptical at first) LOVED this!!! We will repeat it!

Spicy Chili French Fries

I took this recipe to another level; I used sweet potatoes! EXCELLENT! The marinade is very yummy, and I'm looking for other applications for this marinade. Next time I might use Snap-E-Tom for the juice.

One Skillet Corned Beef Hash

I wasn't sure about the cider vinegar...in hash?...but I did it and WOW what an incredible flavor it lends! My hubby doesn't like onions so I subbed chopped yellow sweet pepper and added a little chopped fresh jalapeno and GIDDY UP it rocked!
