Eggplant -- Easy, Good and Tasty
This was my first time making eggplant at home. I used Panko breadcrumbs and left out the Italian dressing, and it was amazing! I put them under the broiler for 2 minutes on each side after baking for 15 minutes. The outside was so crunchy. This is a keeper!

Easiest Peanut Butter Fudge
I made this for my sister-in-law's birthday and she loved it. Everyone raved about it! At first mine came out like pebbles even when I kept mixing. Then I added milk, a little at a time, and continued blending and the fudge got creamy and smooth. Excellent recipe. I'm already working on my second batch!
