This pot pie was so delicious. The first time I made it, I used 2 pie crusts (top and bottom). It was amazing, but so heavy. I am a nutritionist, so I like to find ways to make things taste amazing with less calories and fat. The only thing I changed with this recipe was to eliminate the bottom crust. I heat the filling mixture a bit longer so it's even thicker, dump it over the veggies and chicken, and top it with one homemade pie crust. Same amazing flavors but better for you! thanks!
