Best Ever Meatloaf I

5 stars with a few changes. I read a lot a reviews and then combined their ideas with one of the brown sugar meatloaf recipes. It is a total hit. My family loves it - truly best ever. and not the same old same old. I used 1 lb of beef (less), 2 eggs (more for better consistency), 1c salsa, 3/4 c oatmeal, salt, pepper, italian seasoning, and chopped onion (dehydrated or fresh), plus a SMALL handful of brown sugar. sprinkle the bottom of the pan with brown sugar, add meatloaf and sprinkle top with brown sugar. bake at 350 for 1 hr. sounds odd but it's terrific. I hope your family agrees.

Krumkake II

EXCELLENT AND EASY - SUCCESS the very first time. I made this one a few times and here are some notes. (per my mom and she was right) Needs a touch of salt and a touch of almond extract about 1/4 teas or so each - go easy. When I tripled the recipe, I cut back on the eggs by 1 = 5 eggs = more delicate and "Krumbly" - 4 was too few - tasted great - delicate and "totally krumbly" but a bit too delicate coming off the iron especially if your a novice. Increased flour and sugar a bit ( 2 1/2 c sugar & scant 4 cups sifted flour when tripled) Even tripled I only got 48 kake - breakage and "oops - too dark - we'll have to eat that one" (my son). Remove from iron with a FLAT spreading spatula or a lefse stick if you have one and roll & cool on clean dish towels. They crisp up at they cool and set, don't trap the moisture while cooling. When cool then pack for storage. I've been trying to duplicate my deceased aunts recipe, which was my grandmothers. My mom (85 yrs young) couldn't find her copy. This one comes very close. Hers were more crumbly but with the above changes I believe I've got it. Thank you for a wonderful recipe. Have fun with this one. And make a mountain of them to share.

Dawn's Candied Walnuts

WOW ! Easy, fast and FABULOUS. I'm making candied nuts for my father-in-law and I've been testing lots of recipes on this site. THIS IS IT! Thanks for sharing. AND Thanks to all for sharing your soft ball and sugar tips.

Spiced Nuts I

I've been searching for a good snack nut mix for gifts and I believe I've found it. Thank you. - I did make the following changes based on my families tastes. I reduced the cloves by half (1/8 tsp), and used regular butter and mixed nuts because it's what I had. Near the end of cooking I sprinkled just a smattering of sugar over the top and tossed it in. I made this on the stove top in a wok because I don't have a microwave dish big enuf and my test batch seemed - "chewy". Here's how I finally dried off the oilyness from the butter and it seemed to work OK. After cooking stove top a few minutes I finished them off in the oven at 325 for 5 - 10 minutes. I then put a flat cooling rack on the bottom of a jelly roll pan and covered it with a piece of paper bag covered with paper towels. Then I put them back in the over at 250 for ~10 minutes, stirring as necessary until they were mostly dry. Let cool on racks. I hope that helps someone. If you have any better ideas for drying off the nuts I look forward to learning it. Enjoy.

Excellent in Burritos. AND Easy Didn't have wine so I seasoned to taste and added a couple of chopped Pablano onions I happened to have. Good with or without them.
