Kielbasa and Cabbage

One of our favorite, reoccuring, easy meals. 3 tspns is WAY too much caraway seeds for us so we cut it back to 1 tsp. And, like many other recipes, we upped the bacon a bit since it gets eaten by all while the meal is cooking.

Southern Living magazine's Breakfast Casserole

Not only delicious but easy! We tried both the ground pork option and ham option. Preferred the ham -- seemed oddly lighter and a little faster without having to cook the pork. With ham we added sliced green onions on top which gave it a lovely sing of flavor! Great recipe for preparing the night before and not having the work in the morning.

Cajun Catfish Supreme

My husband and I were both disappointed by this. It was fairly salty and lacked something we can't quite place. Like a crunch or some difference in texture. Ended up feeling like it was a waste of money. Was against my better judgement to throw condensed soup on a pound of fresh shrimp and catfish. Should have gone with my gut. On the upside it was relatively easy to make.

Stuffed Pepperoncini

These are delicious but take some fine tuning. It's helpful to drain extra juice from the peppers. A pastry bag works best when piping in the cream cheese mixture but would recommend putting the bacon through a food processor first. Make sure to use meaty bacon -- avoid the cheaper, fatty bacon. Oddly enough, we found that pretzels are good to have around with this because they cut the zing of the peppers. These make a great presentation on a white, square plate! Even my picky brothers loved these.

Fudgy Cream Cheese Tunnel Cake

This was delicious. I actually made two cakes: one as listed here and the second I used white chocolate chips. Everyone preferred the white chocolate center. Also, on the second cake I sprinkled the pecans on top instead of in it (in case someone doesn't like nuts), increased the cream used in the cream cheese mixture by 2 tablespoons, and made a white chocolate glaze to compliment the chocolate glaze. Yummy!
