To Die For Blueberry Muffins
Every time I make these, I get rave reviews! I sometimes even make extra topping because it's that much better! I've also used frozen blueberries, which still work.

Eggs Benedict
Good and easy to make, but the hollandaise was far too lemony. I would use maybe 2 tablespoons of lemon juice instead. I used fresh lemons, so I'm not sure if that made it too strong. Also for me, I would recommend starting everything else while the sauce is thickening. It took quite a while for me (I don't have a double boiler so I put it on low heat, worked great, but took longer probably). Everything else was easy and fast!

Flourless Chocolate Cake I
I love, love, love this cake! I cannot eat wheat, corn or dairy and this is great! I sprinkle it with some baking cocoa to cut down on the sweetness, and occasionally serve it with a side of raspberry sauce. I've found that the ingredients don't need to be separated- I throw in salted butter with the water, chocolate, and sugar until it melts, then beat that in with the eggs. I don't even have a double boiler- just stir often. I sometimes use a few pieces of dark chocolate for the last few ounces of chocolate on this recipe as well. Another no-spill tip- I put the water-filled pan in the oven before I preheat so as not to spill water over the entire kitchen on the way from the sink.
