Fish in Foil

I can't even describe how delicious these little bundles were:) My husband had just come back from a fishing trip and had 2 beautiful rainbow trout to cook up. I followed this recipe but also added a bunch of chopped red onion to the bundles and fresh garlic cloves stuffed in the cavity as well as a sprig of fresh dill. I was skeptical about all of the strong flavors coming together but they did and I told my husband he had to go fishing more so I could make this dish again:) Thanks!

Cajun Style Red Bean and Rice Soup

Followed the directions pretty much to a tee except I used left over chopped ham from Easter dinner and I left out the Bay leaves while adding a touch of cayenne. This was delicious and soooo easy and quick to put together (I used canned kidney beans). I also feel that the 8 cups of broth is definitely overkill, I only used 3. I also added some frozen corn which worked well. Thanks for a great left over ham recipe that I will be using again and again:)

Baklava

I would have given this 5 starts, except that I found the directions a little lacking. I don't know if that was just me because I haven't made baklava before, but it seemed mine turned out a little dry. This might be because I didn't know if I was supposed to put anything in the layers besides nuts and cinnamon:( If I make it again I would add a little of the syrup mixture to the nuts. Otherwise the flavors are all there, I used walnuts and topped it with a little melted Nutella, so delicious. I also mixed a little with Zoi brand honey flavored yogurt and it was soooo good!!

Pasta with Scallops, Zucchini, and Tomatoes

This was a very yummy pasta dish that came in handy when I had some zucchini to use up and some extra scallops. I did find it a little bland though, maybe because I left out the fresh basil because I am not much of a fan of it. Instead I added a can of Italian style stewed tomatoes, about a 1/4 lb of jumbo shrimp, and 1/4 cup of chopped onion. I also tossed my pasta in fresh parsley and 1/2 tsp of garlic salt. This was delicious:)

Streusel Rhubarb Dessert

I made this the other night because I didn't have enough rhubarb for a pie and was craving something sweet. My main complaint is that it wasn't a nice mixture of sweet and tart but instead the filling actually tasted "eggy" to me. If I make it again I would put more sugar in the filling, making it about 2 cups and then I would nix one of the eggs for the filling and use some butter and vanilla instead. For the crumble I used brown sugar and add a little oatmeal for texture, maybe even some crushed walnuts. Otherwise though, it was definitely a new way for me to use up my rhubarb:) Thanks!

Zucchini Patties

These were amazing! I have made them twice now and the first time I followed the recipe exactly. They turned out a little gooey inside so the second time I did what others have suggested and drained the zucchini, huge difference. The second time I also added a clove of minced garlic and some finely chopped bell pepper. They were soooo good, I definitely recommend making these, just make sure to drain the zucchini:)

Colleen's Slow Cooker Jambalaya

I had never made Jambalaya before so this was very rewarding and delicious! However, I had to tweak it to make it my own. I added about a 1/2 cup of sour cream at the end and used only about half a cup of the chicken broth. Also I put more cayenne in the mix, and used a premade spice mix that was for jambalaya then added two cloves of garlic. Ok, so I didn't completely make a new recipe:) This was a great starting point and I absolutely loved it as did my husband. We were both pleasantly surprised at my first try at Jambalaya so thank you for giving me a great recipe to start with!
