Basil Chicken over Angel Hair

Fresh basil absolutely makes it. My angel hair stuck together, I should have used a bigger pot or a few drops of oil, but it tasted great. Thanks!

Heather's Cilantro, Black Bean, and Corn Salsa

Left out the avocado and red onion. Added only 1 T oil, added 1 tsp cumin, one tsp salt and a few good shakes of cayenne, plus a finely diced jalapeno. Will leave out the yellow corn next time. Love this!

Classic Savory Deviled Eggs

Love, love, love. Tangy, pretty and easy. It's fun to experiment with other versions but this one is the one that reminds me of the version I grew up with, it's pure comfort food and the MOST popular item on the potluck table. If you cut them on the short side and put them back in the paper carton, you do not have a dish to recover after the potluck, and they do not slide around on the way there. I sprinkle with paprika (because my Mom did) and garnish with parsley or cilantro or something fresh and green. Use Ken's Perfect Hard Boiled Egg recipe to guarantee success.

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

I wonder if different sizes of eggs contribute to different results, more than age of eggs or cage free/commercial, etc. I use only "AA Large" at room temp now and this recipe is perfect. My main problem was always peeling the eggs. These slide out of the shell and that alone deserves 5 stars. Now the yolk is also centered and I have no cracked eggs. I love being able to tell at a glance which are hard boiled - I used cider vinegar and they are slightly tan. I rarely had rubbery eggs or discolored yolks, but I have none of that. Wow, I am a Ken's Eggs convert. Thanks Ken.

The Best Parmesan Chicken Bake

Fresh basil made ALL the difference. I did cut the chicken breasts in half so they would not be so thick. I skipped the first step based on all the reviews and just splashed about 1/2 cu of sauce in the pan and coated the breast halves in it, then proceeded with the recipe except I did not put the (crushed) croutons (butter & garlic flavor) and last layer of cheeses on until I had baked the chicken for 25 min. covered. I added the croutons and cheeses and baked another 10 min. uncovered. Fabulous was the rating by all 6 people. It is a good casserole for hungry people. Oh yeah, I added crushed red pepper flakes before the last layer for 1/2 of the casserole because there are spicy food lovers in my family. No leftovers - darn.

Black Russian Cake I

I did not get to taste it, so not sure about how many stars I should give. I made it for a Dessert Dash for the school auction, I thought it would be a fun item for the right group. I had a hard time with it when I took it out of the oven though! I turned it upside down too soon and it crumbled. Wait until it cools!!! I frosted it and decorated it strategically with partially sliced strawberries, but hope others will heed my hasty mistake and let it cool.

Kale and Quinoa Salad

I steamed the kale (trader joes organic in a bag) in 1/4 C of chicken broth for 1 min. and used leftover quinoa. This salad was so good. I Did not have any cheese, probably would not have added it even if I did- ruins the nutritional benefit for my diet, and we did not miss it. Both DH and Teen Son declared it a winner and so the 5 stars. Thanks kicius!

Hamburger Soup I

I added a teaspoon of Penzy's dried garlic and a tablespoon of fresh lemon juice which I think really changed the soup into a masterpiece. It added a subtle clean flavor that I think was unexpected but somehow lightened and complimented the other flavors. Three thumbs up from teenage boys and hungry husband.

Make Ahead Lunch Wraps

Cook the rice with taco seasoning. Mix one can black beans, one can pinto, one can salsa and one can corn, drain all except salsa. Add 2 C rice and one C shredded sharp cheddar. Layout 10 tortillas and divide mixture amound them. Place extra cheese and some jalapenos on each one. Roll and double wrap before freezing. Wow.

Easy Sausage Strata

I used sliced bagette from the grocery store day old shelf. It was already sliced thin, and therefore pretty dry. It worked great. For one pan I cut the slices into fourths, and I think the consistency when baked was better, those smaller pieces "puffed" even better than the slices. I got the sausage really brown which looked so appealing when the final dish came out of the oven. I used a tube of spicy suasage, sliced into rounds. When the sausage was done I cut the rounds into six pieces so no knives would be required at brunch. I let it sit in the refrigerator for about three hours before baking. It took an hour to bake. Everyone lived it, big hit.

Banana Sour Cream Bread

I have made this twice and I took the four big loaves to separate functions. It is amazing what a difference the sour cream makes. I have to admit that I will not make my mother's traditional banana bread anymore, except for my brothers. Everyone else likes this better, and so do I.

Fresh Southern Peach Cobbler

Block party favorite. I layered the first batch of topping as a bottom crust (without the water and only 1/2 the sugar) then added 6 very ripe, very sweet peaches and baked 10 minutes. I tossed 2 cups blueberries on and then used the topping suggested by another reviewer of equal parts milk, flour and sugar, but I shorted the sugar again, those peaches were already so sweet.

Fish Fillets Italiano

I made this in foil packets and put them on the grill, wow, delicious. The packet made it easy to vary the recipe for my picky eater (no onions in his) and you can't beat the cleanup. A side of brown rice made the meal complete.

Heavenly Angel Food Cake

I was leary, my Mom made the best angel food cake and I never got the recipe, but it was so delicious and light. Great for Easter when eggs are so cheap.
