Grandma's Lemon Meringue Pie

My first time making lemon meringue pie ever so I was so amazed at how SIMPLE yet delicious this recipe was! It was a little too sweet for our tastes, so next time I'll go lighter on the sugar and maybe use the juice and zest of half a lemon more. Other than that, it's great! Thanks for sharing!!!

Remoulade Sauce a la New Orleans

This sauce is amazing!!! I don't even like mayonnaise...I hate it, actually. If it came down to dying a slow painful death and eating a tablespoon of mayonnaise I'd have to think about it for a sec, haha. But the other abundant flavors in this sauce come together so well that you don't even notice the mayo! It has the perfect amount of kick. Not so spicy that your mouth heats up and your lips burn and your nose runs, haha. This recipe makes a lot more than 6 servings, in my opinion. I topped off 4 4-ounce pieces of salmon with a generous amount of sauce on each one and there was a ton left over. I wasn't able to find creole mustard so I used dijon...and I hate olives so I left those out. Otherwise, I made the recipe as-is.

Chewy Chocolate Chip Oatmeal Cookies

My husband and I LOVED these cookies! I took another person's advice and used less salt (like a quarter teaspoon). I didn't have any nuts on hand but other than that, followed the recipe exactly. I made smaller sized cookies, yielded 4.5 dozen! They baked chewy on the inside and just slightly crisp on the outside. This will be my base recipe for cookies from no on. Oatmeal raisin next!

Vegetarian Korma

I enjoyed making this dish, and it tastes great, but I did make a few adjustments. I used onions, peas, cauliflower, carrots and potatoes instead of the peppers (this combination is more of what I'm used to ordering in restaurants); less jalapeno (wanted more sweet than spice); left out the cashews and used coconut milk instead of heavy cream. Also, to achieve that pretty yellow color, add turmeric powder. :) Served it with chicken tikka masala and it was a big hit!

Chicken Tikka Masala

Amazing! I was sooo very skeptical about making this myself because I didn't think the result would taste anywhere near as great as when I order this dish in restaurants. Boy was I wrong! I also made adjustments to the recipe, simply because a) that much salt is a death sentence (a pinch will do the trick for the marinade and for the sauce); b) my family likes things more on the mild side. I used half a jalepino and a teaspoon of cayenne pepper instead. If you're worried about fat intake, use milk instead of heavy cream (just add a little flour to the butter once the onions are sauteed and the sauce will thicken beautifully). I made vegetable korma and rice to go with it and it was perfect! Will make this recipe again and again. :)
