Extreme Chocolate Cake

Overly sweet icing. The cake was good. I made it as directed with the one exception of adding coffee instead of water. The cake part of this dessert was good but I have made better recipes that I have ran accross. The icing had a good texture and was easily spreadable. I did have to add extra milk because it was very dense. My beef with the icing was it was TOO much. I started to follow my instinct and use only half the coco but I then second guessed myself on the wet to dry ratio and used it as instructed. The icing was EXTREMELY rich and that is said with a huge sweet tooth of my own. Cut back on the coco powder and it may be more to my liking. It is worthy of tweaking in the future to come up with a better less "extreme" icing. It was so rich it was almost uneatable. I will stick with another cake recipe that my family enjoyed more. The icing has potential but not "as is". It wasn't a complete birthday cake flop, but there will be left overs.

Black Beans with Bacon

I didn't have black beans. Used white kidney and garbanzo. did add cumin, cyanne, and a pinch of nutmeg. I didn't have carrots but I did have a red bell pepper. Taste really good. Also added lime and a tad of zest to the mix.

French Baguettes

tasted good. My flaw was I forgot to let it rise that last time. It turned out too Dense but I could see why everyone like it. I am going to try it again correctly. I would say that my in experience in bread making was the problem here not the recipe. I also used honey instead of sugar just because I could.

Spicy Garlic Lime Chicken

We enjoyed this very much. I did alter the recipe a little bit. My limes were dry but I used what I had and between pulp and juice it was about 1/2 cup of stuff. I omitted the butter and used 1/4-1/2 cup of olive oil and I invited 2 tbls. of jose cuervo to the party. I marinated over night and grilled 24 hrs later. The base recipe was going to be really good but we like our food really zesty so I had to adapt. My daughter had seconds which is always the sign of a "keeper".

Ricotta Breakfast Pancakes

OK, modified a bit. Used Trader Joe's pumpkin pancake mix. I used some buttermilk and milk combined. I did add an egg and some pumpkin pie spice to up the flavor a bit. Used half's on the ingredients we only have 3 people in our family. These burned even at a low heat. These also were hard to flip. I gave up after the second pancake. I added extra eggs and put it in the oven like a German Pancake. Hopefully it will turn out. I suspect that this might have been better if I had a waffle machine. The flavor of the batter was good.

Crispy Fried Chicken

I have made something similar to this for years. I started out with this idea but it was very bland. I found that if you add hot sauce (Texus Pete or Slap Yo' Mamma) to the buttermilk it gives the meat a great flavor base(buttermilk is a key to good fried chicken). I also add salt/pepper/dried sage/dried rosemary/dried parsley (herbs ground into a powder) to the flour. I don't normally keep paprika but can't say it wouldn't be good in the mix. Adding these ingredients to the flours gives it a better flavor takes on a KFC like quality but better cause I don't like KFC too greasy, salty etc. I can control the spice amounts to my families taste and it is an all the way round winner for the base recipe. AS Posted the recipe Needed Kicked up a notch by additional ingredients. When frying I do cover with a lid after the chicken has been browned on both side it seems to lock in the moisture better when done this way and by sealing off the chicken by browning first this keeps everything crispy. FYI to those who's coating is coming off your grease in my experience isn't hot enough.

Chicken Tortilla Soup I

Coco's Meatloaf

Best Meatloaf ever. I did take a few cues from the other reviews. I added garlic to the meat loaf puree. I also added Worcestershire to the topping. I used a pesto crouton instead of saltines. It was delicious. I have been told to keep this on the repeat list my husband did request I use less spice on the next go round. So I will try to reduce the crouton's by half and add half bland bread crumbs or something of that nature. I am finding the left overs a bit tangy but I like it.

Marble Swirl Pound Cake

I made this the first time two weeks ago but tweaked it a little. I was looking for a chocolate pound cake so I adapted this receive. I used an additional 1/4 cup of cocoa, I sub. 1tble spoon of vanilla (instead of 2tsp-what can I say we like flavor enhanced.) I also used strong unsweetened tea (loose leaf brewed-black-too lazy to waste/make a cup of coffee just for the cake) to the mix to bring out the cocoa. I added a ganoche adapted drizzle to the top using 1 tble spoon of sugar, milk, butter and chocolate chips. This was a "Chopped"/Paula Dean inspired experiment. (PS I only use real butter in stead of the chemical rich sub). Results-family loved it. I was gone in two days. My teen recently passed up the offer of one of those really rich chocolate cakes at the bakery while shopping yesterday, opting instead to ask me to make this again. I almost fell over there in the store (she is a very finicky eater). We loved it but adapted. I imagine the base recipe is very good that is what I worked off of.
