Healthier Annie's Fruit Salsa and Cinnamon Chips
I make it this way all the time. I do sometimes add a little Splenda and maybe some brown sugar depending on the sweetness of the fruit. I have also melted Ghiardelli dark chocolate chips and drizzled the chips lightly for a special treat. Also I added my chocolate mint from the garden chopped finely. Any mint or even Basil would add some nice flavor to it.

Grilled Scallops
I thought this was quite good, I think perhaps the reviewers who didn't enjoy it as much may have used wet scallops rather than dry. We do not have ready access to dry scallops so when we find them I buy them. Wet scallops are treated with a preservative that can give a chemical aftertaste, I have read articles that say you can mask it in various ways but all are unsatisfactory. Ask your market if they are wet or dry, they should know!

Quinoa and Black Beans
I made this for just me, hubbie and son are on a fishing trip! I didn't have quinoa but I had exactly 3/4 cup of Jasmatti rice. I didn't have cayenne (don't know why) but I had Penzys' chipotle seasoning I had recently purchased to try. I threw in my last few fresh asparagus spears to steam at the end and had it with a Boca burger. Wonderful flavors, definitely a do over!
