Slow Cooker Italian Chicken Alfredo

Reviewed: Mar. 31, 2010
Going to have to agree with everyone here and say the sauce was the real show stopper. Creamy and so full of flavor. I'm a garlic junkie and actually used a handful of cloves and I used fat free cream cheese and low fat or fat free...can't remember which...cream of chicken soup to make it a little less fattening. Turned out great. I also used a bunch of fresh mushrooms...many more than 4.5 ounces, as my boyfriend and I both love them. Also added cracked black pepper to taste and topped with shaved Parmesan cheese. This dinner was so easy...will definitely be making again.

Pickled Asparagus

Reviewed: Jun. 5, 2010
I barely followed this recipe at all as I wanted spicy spears for bloody mary's and I know that the sugar takes the bite out of the vinegar. I will say that the asparagus prep directions were spot on. I also added smashed garlic cloves to each jar and a sliced red jalapeno and omitted the mustard and dill seed. I doubled the fresh dill. So, after a lot of adjustments I loved it.

Jalapeno Garlic Tilapia Pasta

Reviewed: Mar. 13, 2011
I wasn't sure how much I'd like this recipe. It was such a pleasant surprise how delicious it really was. Perfect amount of heat. Great use of tilapia. I think next time though, I wont fry the fish and just cook it as is. The sauce provided so much flavor I think frying it is unnecessary. I think the tilapia could easily be substituted with chicken or shrimp.

Chicken Pot Pie IX

Reviewed: Nov. 20, 2010
Great recipe. I chose to oven roast the carrots and celery instead of boil. I seasoned them with olive oil, and just a dash of pepper and poultry seasoning. I also chopped up potatoes and let them simmer in chicken broth seasoned with a little poultry seasoning. They soaked up all the broth and flavor. I seasoned my chicken breast with a little salt, pepper and poultry seasoning and broiled them. To the gravy, I added two cloves of garlic-diced. I made individual pot pies with ramekins and the cook time was approx 30 mins. They turned out AMAZING. My boyfriend said it was the best pot pie he's ever had, and I have to agree.

Pesto Cheesy Chicken Rolls

Reviewed: Aug. 6, 2010
This was amazing. Original recipe gets 4 stars, but with the adjustments made per the suggestions of the reviewers it's easily a 5 star. I made my own pesto, from a recipe I found here and I breaded my chicken. I think breading the chicken makes a huge huge huge difference. I will most definitely be making again.

Mini Sweet Potato Samosas

Reviewed: Apr. 20, 2010
These were amazing! I followed the recipe exactly with the exception of adding a handful of pressed garlic into the water when the sweet potatoes were simmering, which were later mashed in. I was surprised at the beautiful color they got in the oven...I thought I would end up pan frying them, but they were perfect. Can't wait to make again.

Greek Chicken Pasta

Reviewed: Feb. 27, 2011
5 Stars!! For both taste AND ease. I followed the recipe...mostly. I, like others, added some of the juice from the artichokes and threw in some olives. Turned out delicious and it really only took 30 minutes. I can't wait to make this in the summer and serve it chilled!

Easy Sugar Cookies

Reviewed: Oct. 19, 2011
It was later in the evening and my sweet tooth started up. I had some frosting in the fridge to use up so I thought why not sugar cookies. My sweet tooth was satisfied in about 15 minutes!! These were so fast. I halved the recipe. From there I froze half the dough and then baked about 12 cookies. I used my pizza stone and baked them for about 8 minutes. They turned out PERFECT. So soft, so chewy. Perfect sugary buttery flavor. To be honest they don't even need frosting. Glad to have found a "go to" sugar cookie recipe! **Note: I doubled the vanilla per personal preference. I also put my frozen butter in the microwave for a minute. Wasn't completely melted but right on the verge.

Venison Tenderloin Bites

Reviewed: Jul. 25, 2011
This was a hit! I marinated the tenderloin in vinegar, ketchup, worcestershire sauce, chili garlic sauce and lemon zest for about 12 hours. Then I followed the recipe as follows except I just served them as "bites" and skipped on the arugula. They turned out so tender and flavorful. There were a hit and gone in minutes.

Crab Rangoon

Reviewed: May 6, 2010
Made a few changes, like most everyone else. I added a few tbsp of mayo--makes it unbelievably creamy. I didn't have any green onions, so I just used yellow. Doubled the garlic, and added a dash of sugar. I also substituted canned crab for fresh crab from the meat counter. They turned out so awesome.

Butternut and Acorn Squash Soup

Reviewed: Nov. 7, 2010
Great recipe!! Very easy. I used about half the brown sugar and added curry power to the onions when they were sauteeing. It made a ton so I canned the leftovers. Can't wait for fresh squash soup in the middle of winter!

Crispy Mashed Potato Pancake

Reviewed: Jun. 6, 2010
Took the advice of other readers and added a bit of flour. I also used fresh garlic instead of the powder. Great way to use up left over mashed potatoes.

Broiled Tilapia Parmesan

Reviewed: May 2, 2010
What an awesome recipe!! I'm always on the lookout for different ways to prepare tilapia. I had to change the recipe a bit and I think I will prepare it that way from now on. I used fresh basil and an actual onion and celery stalk. I threw all ingredients into a food processor and it made a nice mixture. Turned out awesome! I'm passing this recipe on to many others.

Easy Slow Cooker French Dip

Reviewed: Apr. 20, 2010
This was SO good and easy! I let the meat get to room temperature, seasoned with salt and pepper then seared on high heat on each side. Once in the slow cooker I added a handful of crushed garlic cloves and about half an onion. After about 6 hours I took the meat out, sliced super thin and returned to slow cooker for an additional hour. I broiled the bread and melted some gruyere (left over from when I made french onion soup) and mozzarella. We LOVED it. My boyfriend added a little horseradish sauce to his. These turned out so so good. And the leftovers were even better. Will be making again.

Low-Fat Corn Bread

I really wanted to love these. I followed the recipe exactly and they turned out way too dry. I ended up tossing most of them. I might try this recipe again as a base.

Pasta Pomodoro

Reviewed: Nov. 7, 2010
So simple and amazing. Only thing I did different was I sauteed shrimp and added the dried red pepper flakes to the shrimp then mixed it all in with the pasta. Left overs were even better.

Stuffed Green Peppers I

Reviewed: Aug. 10, 2010
These were SO good!! I made a few substitutions that I was quite happy with. I used half ground beef/half Italian sausage. I also added a few diced cloves of garlic as well as diced jalapenos for a touch of heat. I left out the cheese...it just didn't seem entirely necessary and they turned out amazing. I can't wait to make these again. I cut the recipe in half, but still used the same amount of rice which I precooked. PRECOOK THE RICE!!

Spinach Quiche

Reviewed: Aug. 10, 2010
This was my first quiche I've ever made and it was a huge hit. The whole thing was gone!! I did follow the advice of others and really cut out most of the butter. I also fried and diced a few slices of bacon to add. It was so delicious. I can't wait to make again...which I will because like others have noted...there was plenty of filling left over. I did cheat and buy a frozen pie crust...but it still turned out awesome.
