Grilled Lemon Chicken

I loved this! I can't believe people said it wasn't tangy enough! My gosh, it was surely lemony! I marinated mine for about 6 hours. I also scored the chicken on both sides prior to marinating. Very refreshing with the red peppers too! Thanks for sharing.

Asparagus with Parmesan Crust

I really liked this a bunch!! I had some lemon already wedged so I used the lemon at the end instead of the balsamic. Delicious! I also added the parmesan cheese halfway through cooking as to not burn it. Thank you for posting!

Corned Beef and Cabbage II

I really liked this a bunch. I had a 6.5lb corned beef and I think I should have cooked it a little longer than 4 hours but, that was my error. The recipe was very good. The best part was adding the butter and the parsley at the end. I did add a little salt at the end as well. Thank you for sharing!!!

Basil-Garlic Grilled Pork Chops

These were very refreshing! I used a little more two limes but, otherwise followed the recipe exactly. Don't overcook. They cook up fast. Thanks for sharing!

Eggplant-Ziti Parmesan

A great way to use eggplant! I admit to being a bit nervous about not cooking the eggplant first but, if you slice the eggplant very thin, no need to worry. They cooked beautifully with the ziti. Aside from using about twice more sauce than the cook suggested, I followed this recipe exactly as written and it was a huge winner for me. Thank you for sharing!!

Tasty Tuna Burgers

I have been making these for a while and they are awesome. I do add more chili sauce but, that is for my own taste. They are also good made in to small balls and deep fried as an appetizer served with white sauce on the side. In this scenario, I add more bread crumbs so, they are not too delicate to go in the the deep fryer. Just another way to serve them. Oh, and to make these a little less delicate, in the ball form or pattie form, it is helpful to put breadcrumbs on the outside. Just fill a plate and turn the patties on to the breadcrumbs, both sides. Or, roll the balls in breadcrumbs. It works! Good job in posting this delicious recipe. Thanks!!
