Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)

Followed the recipe exactly for the rice and it was not glutinous enough and was way too sweet. Sad! I just ended up putting plain coconut milk on top in hopes of mellowing out the sweetness. Wouldn't use this recipe again.

Penne with Spicy Vodka Tomato Cream Sauce

Really good! Sauteed some minced onion with the garlic and then added sausage and cooked for 5-10 minutes on medium to med-high. Then added tomato paste and rest of ingredients. (Did not have crushed tomatoes so used a can of tomato paste.) Added a tiny bit more vodka and also used half and half instead of heavy whipping cream. Added extra butter to make up for this. Used two links of polish sausage, decased and chopped up. Used dried parsley instead. Yum!

Blackberry Cobbler II

First time making cobbler but this was really good! Substituted coconut sugar for granulated and only used about 1/4 C in the dough and about 3/4 C in the berries...next time, might reduce to 1/2 C in the berries but it wasn't too overly sweet. Added 1/2 tsp cinnamon in dough and 3/4 tsp in berries. Didn't use a cast iron pot. Instead, heated berries on stove to boiling, meanwhile, putting a baking dish in oven to warm up with the oven. When berries were boiled, poured them into heated oven dish, then spooned batter on top and heated for required time in oven. Very happy I tried this!

Crab Dip

Such a simple and good recipe! Added a lot of crab that I had around (probably more than called for in recipe). Also added a little more garlic powder, fresh diced jalapenos and bacon. Topped with white sharp cheddar cheese after everything was in the bread bowl and after 10 minutes in oven in the bread bowl, broiled for a few minutes. So addicting, we could not stop eating this!

Nanaimo Bars III

These are amazing! I think next time I would double the top layer and maybe the middle layer, although taste wise it doesn't need it. Used coconut sugar instead of granulated, unsweetened coconut, and used coconut cream flavored pudding mix instead of custard powder. I think the sweetness was perfect. Reduced butter in the middle layer by about one or two tablespoons but that layer didn't harden as much as I expected it (not sure if it is supposed to). It's hard to stop eating these!

Oatmeal Chip Cookies

Great cookies! I used 1 Cup of coconut sugar instead of white. Also, didn't have a full bag of semi sweet chocolate chips so used a mix of those, bittersweet, butterscotch and white chocolate chips. Will definitely make again!

Caribbean Zucchini Bread

Yum, so good! Used 2 cups of whole wheat flour and 1 cup of all purpose, used sour cream instead of oil and added a half of an extra banana. Added a couple handfuls of flax seed too. Will definitely make again!

French Baguettes

Good recipe but I thought it was too little for 2 baguettes. I guess I am used to large ones! Or maybe mine didn't rise as much as it should have? I don't think I like egging the crust before baking either, but otherwise, the flavor is pretty good.

Colorful Grilled Veggies

Perfect camping recipe! Added yellow zucchini and everyone loved it. I thought the dressing was great. A little more dressing would be good, but I wouldn't quite double it. The subtle flavor was nice. Cooked on an open fire, on a grill, for about 10-15 minutes.

Blueberry Orange Bread

I used this recipe to make cupcakes. They were good but on the dry side even though I slightly undercooked them. They also did not have nearly enough blueberries, even though I added a super heaping cup. I used juice from actual oranges but used dried zest and I don't think the orange flavor stood out as much as I would have liked. Not sure what this would turn out like as bread but as cupcakes, it needs a little tweaking! I love the idea of blueberry and orange though!

So good! I used a mix of all purpose flour, oat flour, whole wheat flour and unbleached bread flour. Used canola oil and almond oil and topped with flax seed. Only needed about 20 minutes in the oven. I also did a 6 strand braid. Fantastic bread!!!

Quinoa Tabbouleh

This might be my favorite quinoa recipe! Didn't have cucumbers or carrots and substituted cilantro for the parsley. Also, added some mint. Used 2 TBLS OO and 2 TBLS lemon juice and sea salt to taste.
