About this Cook
I started cooking very young, at first I'd just put things in the oven after school before mom came home. Then she started having me do a few simple steps to get dinner ready, pretty soon I started hanging out in the kitchen paying attention. Before I left home I was a pretty fair gourmet cook, but I had the best teacher in the world. Besides cooking I crochet, read, and make jewelry (beading, sterling, & chainmaille).
My favorite things to cook
Sauces. My specialty is sauces, I mastered a roux early, and I love to create unique sauces.
My favorite family cooking traditions
Christmas dinner is the same meal every year, it has been since 1980. Prime Rib with tawny port sauce, sauteed escarole, potatoes, and corn pudding. Mom always talks about changing the menu, which always gets the same question, "if we aren't having Christmas dinner on Christmas, then when are you going to make it?" Then my mom decides since she has to make it anyways, she might as well make it on Christmas.

Peanut Butter Snack Bars
Of course I love it, it's mine. I usually use homemade peanut butter, which has little to no sweetener, so if you are using store bought (even natural) you might want to cut back on the other sweeteners. Also, some reviewers commented on only boiling the peanut butter mixture 2 minutes, I don't even boil it that long, I just let it come up to a boil, which takes 3-5 minutes from when I turn the heat on. Love that everyone is playing with the ingredients, change up the cereal, grains, nuts, seeds, chips etc. The peanut butter chocolate is our favorite and I always use the PB, sometimes with the almonds, sometimes more peanuts. I have done white chocolate & almonds. I've used golden Graham's for the cereal, and replace the nuts with mini marshmallow for a s'more like bar. Did pecans & a white chocolate & cinnamon chip mix. Corn Casserole I
OMG good. I used the 8oz cans of corn & cut pasta in half. I used 1/2 cup of shredded cheese and halved again the butter (could have cut it further). I used a dash of hot sauce, not enough to make it hot, just enough to balance the sweet. I did 10 min in microwave covered, stirring halfway and 1 min uncovered.

Garlic Chicken with Orzo Noodles
This was awesome! Boiled orzo in 2.5 cups chicken broth, was perfect, didn't need to be drained. Oil, garlic & red pepper, I didn't measure, just used what was to our taste. Tossed in cheese when I added orzo, parsley & spinach. Cooked until spinach was wilted & topped with more cheese. Loved it. Was super simple for a week night, chopped chicken & garlic while waiting for chicken broth to boil. Tore spinach, chopped parsley, grated cheese while chicken was cooking. Tossed it all together, let it cook a couple minutes and dinner was served. I didn't time it, but I'm sure dinner was on the table in less than 30 minutes. Like someone said a little feta, olive and a squeeze of lemon could make this Greek.
