Meat and Spinach Ravioli Filling
Awesome recipe! I used lamb instead of ground beef and my fiance can't get enough of them. I did sweat some onion before browning the meat and used my blender as i don't have a food processor, I would recommend chopping up your fresh spinach though before cooking to make it easier on your food processor or blender. haha.

Oatmeal Chocolate Coconut Chewy
This recipe pretty much incorporates everything i really wanted in a cookie. I did make a couple changes. Instead of semi-sweet chocolate chips i used White Chocolate Chips (I don't really care for "chocolate" chips) and I used macadamia nuts. I also didn't have enough All-purpose flour on hand so i used Bread Flour. I refrigerated my dough for hours prior to use, but 20 minutes would be alright. My oven tends to cook a little fast so i decreased the temperature to 350 and baked them for 8 1/2 minutes on the middle shelf. They were wonderful. I'll have to make them again since my father in law decided to give us three contains of oats he no longer wanted.

White Chocolate Raspberry Cheesecake
This was my first cheesecake ever and it came out really well. I have made three in the past month. Two for thanksgiving family functions with a request for another for Christmas. One of the things I modified was the procedure to make the raspberry mixture. First i combined only the raspberry sugar and water, once it was all mixed I strained it then put it back on the fire adding the cornstarch after. I also added an extra tbsp of cornstarch as i felt it was little too thin after the first cheesecake. You can also use this recipe to make a strawberry, blueberry, wild berry, etc type white chocolate cheesecake. The other thing with this recipe is that you have a lot of raspberry mixture left over if you use only the 6 tablespoons so I used a pastry bag and added the raspberry mixture to the middle half first then made a nice design on top and used a knife as suggested to marble it.
