Oklahoma Brisket

The meat was waaay overcooked! Even so, it was still quite good. So next time, I'll try dropping the oven to 275 and only let it kiss the grill in order to crisp the outside. This is a great alternative to smoking a brisket.

Grilled Beef Tenderloin with Herb-Garlic-Pepper Coating

Outstanding! We didn't have the foresight to put the rub on in advance, but we couldn't see how this could have been any better. We followed the recipe exactly and served this for Easter brunch (alongside a honey ham). The men in particular just raved, and needless to say we had nothing left over for sandwiches the next day. Many, many thanks for this fabulous recipe!

Peanut Butter Cup Cookies

Excellent and so much fun to make! Here's what I did: 1) Used Skippy peanut butter 2) Froze the peanut butter cups overnight 3) Refrigerated the dough for an hour before using 4) Rolled the cookies into balls and placed them into a mini muffin tin 5) Baked per the recipe time 6) Pressed frozen PB cups into the middles and put tray in freezer on top of a towel for about 15 minutes 7) Took them out of freezer and put on a plate 8) Turned around - plate was empty Here's what I'll do better next time: 1) Bake when no one else is around

Paleo Chipotle Dipping Sauce

Excellent sauce! I used Duke's mayo (what's a paleo ?!), and made the sauce according to directions thereafter. I thought 2 chiles in adobe was spicy - luckily we like the heat. If I were to make this for company, however, I would use 1 1/2 chiles. The sauce was delicious paired with Chicken Diablo which I bought already made from Central Market. The sauce competed with the chicken a bit, but Hubs ate every morsel.

Chili Burgers

What a great change of pace from an ordinary burger!! I really enjoyed these!! We found that the burgers stayed together better with smaller patties, but we usually make HUGE burgers, so they may have been average size after all. Hubs thought the sausage overtook the beef and would prefer to just grill some sausage on the side next time. Even so, I loved them!! Such a great idea!! Thanks so much MEHUNGRY98!!

Simple Artichoke Dip

This is a fabulous dip!! I added two fresh cloves of minced garlic and the juice from 1/2 lemon. It's quite greasy, but very good even served cold.

Reuben Sandwich II

Absolutely delish! I used german rye from the bakery, claussen sauerkraut (refrigerated), and a heaping helping (1/3 pound for one sandwich) of Boars Head Pastrami and 2 large slices of Boars Head Imported Swiss Cheese. I used "I Cant belive It's Not Butter" Spread even though I almost always cook with butter, because it's a dream to spread on bread. I heated the sauerkraut in the micro 20 seconds then squeezed out the moisture in several paper towels. We split the large sandwich between the two of us. Wonderful!! Thank you!

Lemon Cheesecake Squares

Oh my heavenly stars, this is wonderful!! I made a half recipe in an 8x8 glass baking dish. I prepared the pan with Bakers Joy and after cutting these into 16 squares (dipped a sharp knife into hot water and wiped clean before each cut), they came out without a fuss and looked beautiful. I used our favourite raspberry jam with seeds and that was just fine. The cooking time was true, 35 minutes. I topped each with a fresh raspberry. Gorgeous! We loved the unique taste of the crust and the refreshing burst of citrus from the fresh lemon juice and zest. Thank you so much for the recipe! Update: Just took a couple of bars out of the freezer. They've been in there for quite a while, and after defrosting they taste every bit as good as the day they were made!
