Mexican Style Shredded Pork

Thought this was a great starter recipe but needed some tweaking to make it good. The addition of a drained can of rotel, about two tablespoons cumin, and extra cilantro mixed in with the meat improved the blandness. I also added more chipotle spice to give it more smokiness.

Balsamic Baked Tilapia

Wow! Great tasting recipe that I had some initial doubts about. Blue cheese and fish??? Yes, it works especially as a foil to the sweet peppers and the onion, not to mention the pairing with the balsamic vinegar. One addition I made was to sautee some sliced mushrooms after the onions and peppers cooked down a bit. I did not add a full cup of blue cheese as I thought it would be too much. Instead, I added about a scant quarter cup. I served it over buttered orzo with pecorino romano, salt and pepper. Husband thought it was company-worthy and a great dish that he raved about four separate times! Can't wait to make again over the mixed greens.

Banana Oat Muffins

Great recipe! Used half cup whole wheat flour and 1 cup white to make it "healthier" and then undid that by adding two large handfuls of semisweet chocolate chips. Had a little extra and made 6 mini muffins in addition to the 12 muffins. They turned out with high tops and a lovely brown color. Daughter rated it a keeper and I agree. Thanks!

Garlic Cheese Flatbread

Excellent flatbread dough that is chewy while being very simple to make. I did have to add more flour (probably close to 1/4 cup) to the bread machine since I mixed the dough in that. I didn't feel the extra flour made the results too dense. I also scattered some cornmeal on the pan before placing the dough freeform on the pan. Topped with roasted veg, parmesan, fresh thyme and rosemary, and prosciutto after spreading a little olive oil and fresh ground pepper. Yum!

Grilled Garlic Artichokes

Wonderfully tasty recipe. I boiled my artichokes for about 15 minutes and then grilled all sides until nice grill marks appeared. The combination of lemon and olive oil and charred bits of artichoke is heavenly. Left out garlic as husband is allergic and it was still great tasting. I played with lemon juice to oil ratio and bumped up the lemon as well as using kosher salt and freshly ground rainbow pepper. So pretty for a party as well. Removing the choke is done by slicing the artichoke lengthwise and using a spoon to scoop it out. Trim sharp points of leaves with kitchen shears.

Rubbed and Grilled Pork Loin

Excellent recipe and spice combination. Used ancho chile powder in place of regular Chile powder on a 2.7 lb roast and it took about 40 minutes after 10 minutes of charring/browning. Thought the person who had issues with browning the roast was a bit unfair. Seems that he doesn't grill meats often. Why would you let it burn? You do want some blackened bits though! All grills are different, know your grill! The flavor of the meat was great and it turned out juicy with a 15 minute rest before slicing. Served sliced on homemade Kaiser rolls with side of coleslaw. Think it would pair well with an apricot or plum chutney. Might try with chipotle powder or smoked paprika next time for a smoky twist. Definitely company-worthy! Thanks.

Blackened Tilapia with Secret Hobo Spices

Great recipe for tilapia! We used to eat a lot of tilapia from Lake Victoria in Uganda where the fish has wonderful flavor and experimented with tons of recipes. This one is a great change from the usual butter, dill, and lemon type recipes. We did not do the bread as white bread in Uganda is horrible but was great with orzo or rice. Thanks for rolling that hobo for us.

Delicious Ham and Potato Soup

Like so many others there is no other ham and potato to bother with. This is scrumptious! I really like that it requires no cream and is still flavorful, thick and hearty. This is the go to for using up spiral ham from the holidays. Thanks for a winner soup!

Greek Couscous

I did not care for this one but others at the BBQ said they liked it. When made according to recipe, it is a bit bland and needs some crunch. I thought the dried oregano was not a good addition. If attempted again I would use fresh oregano. I ended up using flat leaf parsley and Orange bell pepper while adding more salt and lemon juice. I also added some olive oil as recipe did not state whether to use oil packed sundried tomatoes and I only had the dried variety. I noticed the featured picture for the recipe looks to have ingredients that were not in the original recipe--interesting.

Baked Scallops

This is an excellent recipe that I made months ago (yes, I should have reviewed it months ago, I know). After trying another scallop recipe tonight, I will stick with this one! The other recipe was tasteless while this one had the right blend of spices and texture that even my somewhat picky kid liked. Thanks for a keeper of a recipe!

Pumpkin Spiced and Iced Cookies

This is a nice, soft cookie for those who like pumpkin. The chocolate chips will probably guarantee that your kid likes them too! I frosted some and not others and I have to say they are better with the icing drizzle.

Portuguese Custard Tarts - Pasteis de Nata

These received numerous rave reviews from a dinner party I hosted and I must say they are delicious but definitely very sweet. I think the tough critics probably overcooked the custard custard rushed the milk and egg mixing and so were not pleased with the texture. The vanilla bean is a must and makes the custard delectable. Made these again last Christmas Eve and got a call the next morning about how good they were! Kudos to you John for making me look good. Will always make these for special occasions.

Cracked Wheat Bread I
