Kim's Fried Asparagus

You lose too much of the asparagus flavor. I'm sure to make the dip for get togethers again, it was delicious.

Spicy Mediterranean Chicken with Sausage-Stuffed Cherry Peppers

I am trying to eat healthier without sacrificing flavor and taste. THIS was the way to go! Spicy, flavorful, delicious. Next time I will trim the fat from the thighs a bit and only quarter the artichokes, I cut them way too small. Same with the olives, I used sliced when I should have used whole (I just wasn't paying attention). I seemed to end up with a lot of (yummy) juice and didn't plan for a side dish to soak it up or maybe some nice Artisan bread. Incredible dish, I will be making again and often. Chicken fell off the bone! Thank you, Chef John!

Hot Artichoke and Spinach Dip II

Tonight will be my third time in a 5 weeks of making this dip. You have to try a recipe as written the first to know what you want to tweak to your tastes the second time. First time I dis as the recipes was written EXCEPT I knew the garlic lovers here would need an extra clove. It was amazing and was gone before withing a half hour of it hitting the table. Second time was the same, only I halved the recipe since there wasn't but two of us and we ate it for dinner, haha, it was delicious. Tonight it my third time and the only thing I wanted to try was adding a couple of Peppadew peppers into the mix, just because we love them. It's in the oven, so we'll know soon!

Simple Country Ribs

I have tried many recipes from, and so far this has given me the most successful and delicious results! We always make extra for lunches the next day, but the leftovers fell to the power of munchies. Wicked good recipe, sure to please any meat lover. Boiling them in the sauce made all the difference!
