I lived in LA for five years and ate the "real thing" made by real Cajuns plenty while I was there. I have made Jambalaya from several different recipes, and this is probably the closest to what I tasted out in LA. I think that aside from the flavor of the andouille sausage, the four ingredients that contribute the most to the authentic taste of this recipe are the Worcestershire, the hot pepper sauce, the file powder, and REAL garlic- fresh through a press. We enjoyed this a lot.

Chili-Lime Chicken Kabobs

Loved it! Didn't change much, just added some lime zest as one other reviewer had mentioned, used two small fresh garlic cloves through the garlic press, and used cider vinegar since I didn't have any red wine vinegar. Marinated for close to two hours, and the chicken had great flavor all the way through. Made a little extra marinade to brush on while grilling. My husband and I really enjoyed this and I will be making it again!!
