Moist Chocolate Muffins

This recipe is Amazing! I think the "secret" ingredient that sets this apart from other muffins is the addition of sour cream (which is what I used as a yogurt substitute). I'm sure the yogurt would work just as well. Everyone in my house loved them & they are definitely the preferred muffin around here.

Sweet Potato Chili

The flavor on this was amazing! Made a few minor changes with one batch, but this is fantastic as written. Completely left out the cayenne pepper as there are some sensetive tongues in my household and went with diced tomatoes rather than stewed as it's what we had on hand. Ended up cooking for about 9 hours total. Sweet potatoes were very tender and the whole meal was very hearty and great for a cold fall evening.

Pleasant Pork Chops

"Pleasant" sums this up very nicely. Prepared exactly as written, except I only had 4 chops so I doubt it makes any difference. Extremely flavorful and very good.

Dry Rub Ribs

This came out really good. I used country ribs because that's what I had in the freezer and subbed oregano for thyme (never use thyme in my house). Probably due to the cut of ribs, but cooking time was only about one hour. Came out very tender and extremely flavorful. This is certainly going into the rotation!

Beer Sausage

Absolutely delicious! Made only a few small changes due to what I had in the house. Didn't have any cabbage so I had to omit it (sadly!). Also, cooked in a skillet rather than a pot. Had to add about 10 minutes to cook time to make sure the carrots cooked completely. Will definitely make this again. Used Yuengling Lager for this round, would like to try something darker next time.

Garlic Ginger Chicken Strips

Very pleasant. You can really taste the spices, but they are subtle enough to not be overpowering. I had to double the recipe as I had 2 lbs of chicken and it scaled up very well. Left out the pepper flakes because I didn't have them, but I don't feel anything was missing.

Fudge Brownies I

We increased the chocolate to 6 ounces and decreased the eggs from 4 to 2 as some of the other reviewers mentioned. I think one of the few things that could make these better are duck eggs instead of chicken eggs (duck eggs typically make baking recipes lighter and fluffier, not sure how they will work w/ brownies), ice cream, and some hot fudge sauce.
