When making this recipe I made a couple adjustments just because that is what I had on hand! I used "Lumberjack" Smoked sausage instead of the andoullie sausage and it turned out great! Also, after reading some other reviews I noticed someone put the chicken breasts in whole and frozen! Well seeing as I didn't start this until lunch time this worked out really well for me! Like others I started to notice that it was a little thin after cooking for a good 4 hours so I decided to try to thicken up the sauce a bit by adding tomato paste blended with a spoon full of corn starch! I was a little nervous at first but it actually turned out perfectly and boosted the flavor! Overall this is an excellent dish.. and you HAVE to serve it with cornbread too!!
