Refreshing Summer Squash Salad

Absolutely fantastic. We've done this w/peas, French string beans, spinach - have the dressing on hand at dinner time just pick, wash, mix and eat. Don't know why we haven't tried squash before. Thank you.

Super Scrambled Eggs Number One

I always try to do things ahead of time, "just in case.....". I cook my bacon when I get it, drain & put it in a Zippy bag in the freezer, 30 sec. in the nuker makes it hot & ready to use(perfect for BLT's). We use water instead of milk(fluffier) Fantastic & quick.

Thanksgiving Leftovers Monkey Bread

Now I can't wait till a snowy day. Rec. looks like t takes time to prepare. I would use either potatoes w/sautéed onion & celery & chopped spinach or stuffing w/tiny pcs of broccoli & add craisinettes to mixtures. What a perfect after snow or freezing day movie night dinner. Sure beats the sound of pizza. Thanks. I'm saving this.

Leftover Pizza Breakfast Casserole

We tried this mostly because we always fight to see who gets to eat the last pcs. of cold pizza for a quick breakfast.(We get 2 pizzas for dinners & leave a half.) Made it the night before to keep smackers away. (Our teens have a habit of midnight eating. but I wanted to try this.) Fantastic. And if Red Barren can make a frozen breakfast pizza I'd try freezing portions of any leftovers(HA!). Thanks for the recipe.

Chile Pasta Salad

This was a great dressing, but I do scrape the seeds of the pepper first. Only thing missing were the crunches (chopped colored peppers, onion, celery, raw baby zucchini, chopped broc. florets & shredded carrots.) Also increased yogurt to 6 oz. container. For a full meal add shredded chicken, pork, beef or chick peas. I know - complete change but we love our crunches * don't change the dressing ingredients. Thanks.

Pretzel Reuben Sandwich

It's so nice to find out that we are not the only ones who user coleslaw instead of sauerkraut. Usually we use rye, pumpernickel or sour dough bread. The pretzel rolls were a great change.

Fried Cabbage and Kielbasa

We've made this for years. Always cooked the kielbasa first so I could drain the grease, blot the pan w/paper towels to get rid of the grease but keep the brown bits. I use red cabbage - they say it tastes better. We like our cabbage crunchy so we fry it no more than 20 min. If we have them, we add a chopped apple to the cabbage, then add kielbasa & bacon to warm. Fantastic quick meal. Stars are for as written.

Stuffed Zucchini with Chicken Sausage

With 4 teens I'm not looking for a light dinner. 1st I found 3 really big zucchini. 2nd preheated oven, put in potatoes to bake on 1 side of rack. They were halfway done when the zucchini was assembled & that pan went on the other half of the rack. With the mandatory salad this turned into a very filling dinner with no leftovers. Quick, easy & delicious. Thanks for submitting.

Refreshing Spaghetti Squash and Cucumber Salad

We love spaghetti squash & this was fantastic. Only thing is I have always cut the raw squash in half, nuked 1 half at a time. A med sized squash half takes 8 to 9 min. If I'm using it hot, we leave the seeds in until the last min. The faster you take the seeds out, the faster it cools.

Slow Cooker Italian Beef for Sandwiches

Used a 3 Lb roast (on sale), made 8 samdwiches. All said the best hot roast beef samdwiches they ever ate. Total cost $7.89. Did cut back on the salt, used powder instead of onion salt, served w/horseradish. Small amount left over & used it to stuff zucchini 2 days later. Will make it again using a 5 Lb roast & freeze half for a day when I need a quicky. Thanks for the recipe.

Irish Potato Soup

Remembered from days of old when my mom fed us(11) on so little money. Chunks of potatoe instead of mashed. Sometimes we had it with no bacon. Maybe she used chicken broth those times but she always made it more Irish with bright green parsley. Thanks for a long saught recipe.

Yummy Orange Chicken and Rice

I used big chunks of chicken & half the marmalade. It was a good meal & everyone liked the new twist on leftovers. In response to another review,er it takes a darn good cook to come us with new ideas for left overs. Come to think of it, this would probable be good using the left over pork roast.

Progresso® Creamy Chicken Piccata

I had no idea this was a rcipe when I made it. We had chicken that had to be used (3 boneless breast & 8 boneless, skinless thighs). I found a can of the garlic sauce & a jar of chicken gravy in the pantry. Mixed the 2 in a roasting pan, added chicken, parsley, some scallions & baked at 350 uncovered for 40 min. Served with mashed potatoes & green & yellow beans for color. The breasts were gone, thighs & extra sauce went into container in fridge. 2 days later mixed cut thighs with sauce & penne, served with honey glazed carrots. All gone & everyone loved it.

Mistakenly Zesty Pork Chops

Absolutely Ultimate Potato Soup

This is the soup my mother made so many times during WW2, but without the bacon. I don't know if she made it with cream or milk. She learned from her mother during the depression. It is so good to taste the chunks rather than all mushed. Didn't use tarragon or cilantro - just don't forget the parsley.

Garden Fresh Tomato Soup

We tried this last night. I imagined someone made a typo & left the "d" off sliced onion. Cloves were an excellent choice for flavor. I'll be freezing extra plum tomatoes for winter tomatoe soup & grilled cheese. Thanks for sharing.

Home-Fried Cheese Sticks

Made a double batch for movie night(10 w/company included). Fried half in Canola Oil, bqaked half accoding to directions on store bought box. Served with marinara & pizza sauce. Everything gone. Oven just as good, sprayed them with Pam first to assure crispy. This isn't a staple, it's a treat just like strawberry shaorcake. Thank you mis7up.

Baked Lemon-Basil Pasta

After trying a new rec all 6 of us review at the table. I did chng wine for chicken broth & doubled the chicken. Did not measure the fresh baby spinach or the cheese. Just put a healthy layer on top. One said a little to tangy - 5 yelled "eat a peanut butter sandwich". Next time they'd like to try peppers & mushrooms added to the sauce. Thank you for sharing Brennan, this is a keeper.

Only difference was crushing the bones rather than discard. They're not noticed & loaded with calcium. Absoutely fantastic. Thanks for a great idea.
