Luscious Slush Punch

Reviewed: Nov. 29, 2013
I followed the recipe exactly. Once you pour in the ginger ale it turns the perfect slush consistency! But I did not care for the flavor combo and thought it was too sweet. And I like sweet but not this sweet.

Rempel Family Meatloaf

Reviewed: Feb. 7, 2011
This is a staple recipe I use once a month or so now. I was really surprised with the last low review but I will share my changes and that may even help the last reviewers feeling it was greasy: Most of the time I make this with ground turkey. Now and then when I have a hankering for beefy flavor I will do beef but this really is a good one to try replacing with healthier turkey. If you have never used turkey and want to start being healthier, do half beef half turkey and slowly get the family converted : ) The other thing I change is I never cook it in a loaf/bread pan. If you used a fattier cut of ground beef and cooked it in a loaf pan it will be swimming in grease and perhaps thats what happened to the last reviewer. I just shape the meat mix (which is sort of sloppy and less firm than other meatloaf mixes) into a loaf shape and bake in a greased or pammed 11x 7 pan. I usually frost the loaves before cooking lightly with ketchup or bbq sauce. Ohh and if I am short on time I shape it into six mini loaves that are about 6"x2" (dollar bill size) top with ketchup and they are done in about 25-30 mins

Cabbage Beef Soup

Reviewed: Feb. 7, 2011
This was really good. Even my fussy 8 year old liked it. Basically he will only eat broccoli cheese soup or chili, no other soups. Personally my family would like it with more of the tasty broth. I also thought I would like some peeled chopped potato in it. It does hint at tasting like a chili and I might consider cutting back on the cumin sometimes also. Very yummy comfort food. Ohh I also did not have a 24oz tomato sauce so I used a 28 oz can Pastene ground tomatoes.

Slow Cooker Italian Beef for Sandwiches

Reviewed: Feb. 7, 2011
In fairness, I have never been to Chicago to try the actual sandwich and I am eager and curious to do just that. I added beef boullion to the water and used two pkgs of I talian dressing mix (G.S.). The house DID smell deliciousand I was quite excited! However I cooked it for 8 hours on low,and it was falling apart tender. As much as the smell was wonderful, it tasted like good but bland pot roast. The roasted red peppers and cheese on the sandwich were all that saved it. It was an all day not bad sandwich. I am not sure if maybe adding the seasoning later or using more if the delicious smelling flavor would have stayed? I took half of the leftovers and made Allrecipes beef and cabbage soup, and the other half I turned into a batch of chili. It could have been delicious I guess if the flavors lasted so less time or more of the ingredients

Porcupine Meatballs III

Reviewed: Mar. 2, 2010
I made this last night and everyone raved! Two of my children have their pasta and meatballs without sauce as they have an aversion to tomato sauce. Those two even loved the sauce! It's similar to a plain Spag O's type sauce. I am a time cruncher so I made the meatballs on a jelly roll pan and broiled them on both sides. Saved the time, fat, and mess of pan frying! I then sauted the garlic in a large pot with a little healthier olive oil. I added black pepper and as suggested, the worcestershire sauce. I used a very low fat cut of ground beef I think it was 93 percent fat free. Next time I may go with ground turkey. I also think adding some chopped green pepper to the garlic and oil just might give the flavor of an unstuffed pepper! I tossed some frozen sweet peas and corn in my bowties for the last 3 minutes of boiling and no one noticed as they gobbled it up!
