Blueberry Zucchini Bread

Despite an overflowing pan situation (even with using some batter for 6 regular-size muffins in addition to the four mini loaves), the bread was delicious! It was a little on the sweet side (although no complaints, really), so next time I may follow some previous advice and use a bit less sugar and try to incorporate some whole wheat flour. All-in-all, an excellent go-to, easy recipe for the copious amounts of zucchini in the summer! I froze 3 of the loaves, hopefully they will keep well.

Roast chicken dal

A "must make again" recipe for the whole family! Perfect recipe for leftover roasted chicken. I didn't have as much lentils on hand as I thought and it didn't matter. I served with basmati rice.

Truly Delicious Brussels Sprouts

So super easy, and so deliciously yummy! I didn't change a thing and my husband "brussel sprout hater" was a convert! Thanks for this superb recipe! I bought a whole stalk of sprouts so we'll be having this again soon!

Basic Chocolate Buttercream Icing

Perfect! I doubled the recipe for a 2-layer round cake and had some leftover. Didn't use all the powdered sugar, added a little extra milk (whole milk) for consistency, and used salted butter. Big hit for the 4-year old's birthday cake!

Best Ziti Ever with Sausage

Yum! I'm lazy and left the casing on, sliced the sausage, cut down on the cheese (only because we were short - we LOVE cheese around here), and used fresh basil instead of dried, and it was awesome! I think it would have been just as good if I had made it per the recipe. Easy, filling crowd pleaser!

Grandma B's Bean Soup

Added a chicken boullion cube, two bay leaves, 1 tsp salt, and subbed a little pan-fried procciutto and de-skinned and chunked pork bratwurst. Pureed about 2-3 cups of the soup (all but the meat bits). Served with biscuits. Delish!

Vegan Portobello Stroganoff

Very good! Definitely fulfilled the creamy, meaty pasta craving! Next time I will perhaps not add "all" of the marinade to the cream sauce. And I will follow the other reviewer's recommendation to add the fresh, minced onions to the marinade or saute first. Overall excellent!
