Red Lentil Curry

Reviewed: Apr. 13, 2008
My husband and I liked this very much. I rated it a 4 star because I made a few changes. I used less hot ingredients, using only powdered curry, since we don't like real spicy foods. I used chicken broth instead of water, to add flavor. And used diced tomatos instead of tomato puree for added texture.

Cream Cheese Sugar Cookies

These cookies turned out very good for my holiday cut out cookies. I used vanilla instead of almond flavoring. This is a very simple recipe.

Chicken Vesuvio

Reviewed: Dec. 3, 2007
My family liked this recipe. I used regular yellow onions and didn't use rosemary. I added more garlic and doubled the amount of gravy next time. I needed to add 1/4 cup of chicken broth toward the end of baking because the gravy was baking away. Next time I will try making it with 1 tsp of dried rosemary. I baked it at 375 degrees for 45 - 60 minutes, basting every 10 minutes.

Paul's Pumpkin Bars

Reviewed: Oct. 5, 2007
My husband & I thought this recipe was delicious. The taste was wonderful even without the frosting. We liked the 'cake' texture of this recipe. I used fresh pumpkin pie filling, only 3 eggs, 1/4 cup of applesauce substituted for some of the oil, 1/2 cup whole wheat flour the rest unbleached white flour, 1 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1 tsp pumpkin pie spice, & 1 tsp vanilla.

Roast Leg of Lamb with Rosemary

Reviewed: Mar. 23, 2007
This lamb roast was delicious. I put garlic cloves inside the roast to help add to the flavor of the meat. I initially roasted it at 400 degrees for 15-20 minutes, then at 350 minutes for the rest of the time. A 145 degree internal temperature is too low, the roast was very pink(almost red)through out. I will try an internal temperature of 160 degrees next time I make this recipe. Also I will add water to the bottom of the pan to help prevent the sauce from burning up on the bottom of the pan.

Crispy Fish Fillets

Reviewed: Feb. 12, 2007
This was the first time I have made sole fish, it was great, a very mild tasting fish. I used bread crumbs instead of potato flakes(didn't have it), dijon mustard(1 Tbspn) instead of yellow mustard. I also added spices to the bread crumbs - garlic powder and minced dried onions. I will definitely make this again and add oregano to bread crumbs too.

Fried Soft-Shell Crab

Reviewed: Nov. 27, 2006
This was a very simple recipe to which I made a few changes. My son & I enjoyed the soft shelled crab, wishing I had bought more to prepare. I added salt, garlic powder, and oregano to flour mixture. Used 2 Tbspn of oil to fry 2 soft-shell crabs. Didn't use milk, only beaten egg before dipping into flour mixture. Will definitely use this recipe again.

Ambrosia Fruit Salad

Reviewed: Nov. 19, 2006
I liked this recipe very much. I used only fruit cocktail, marshmallows, and cool whip, since that was what I had in the house. I also added chopped walnuts for additional texture. I didn't used cinnamon or nutmeg, since I wasn't sure I wanted that flavoring in this fruit salad.

Shrimp and Crab Enchiladas

Reviewed: Nov. 13, 2006
My husband, son and I liked this recipe very much. I will definitely use this recipe again. I added leftover Indian Style basmati rice to the inside of the rolled tortilla. I used only shrimp, since that was what I had in the house. I precooked the shrimp with onions, garlic & lemon juice. I cut up the shrimps in medium chunks to help in the rolling up of the tortilla. Being lactose intolerant I put mozzorella cheese on top of the tortillas, during the last 5 minutes of baking, so everyone knew which had the cheese and which didn't.

House Fried Rice

Reviewed: Oct. 27, 2006
This is a great recipe. My teenage son and his friend loved it, me too. I used brown rice for a higher fiber content than white rice. I used brocolli instead of bell pepper & green peas, since that was what I had at home. I didn't use chicken breast since there was plenty of protein between the shrimp and ham. This is an easy recipe and I will definitly make this again.

Garlic Shrimp Scampi

Reviewed: Oct. 25, 2006
This was a quick and easy recipe. I used 1/2 the butter and added olive oil in its place. I love garlic so I did not throw it out after sauteeing it in the butter/olive oil. I also added in some fresh cauliflower which was a very nice addition.

London Broil I

Reviewed: Sep. 2, 2006
Very tasty, my family enjoyed it, and very easy to prepare and grill. I added about 1/4 cup balsamic vinegar to aide in tenderizing the meat and flavor. I found that I needed to grill the steak 10-14 minutes per side in order to have it done, still pink inside.

Seasonal Crudites with Hummus and Baba Ganoush

Reviewed: Jun. 30, 2006
Very good Baba Ganoush. I didn't use tahini since I didn't have any, and my family thought the dip was great. I didn't make the hummus.
