Black-Eyed Pea Gumbo

this is very good for a vegetarian meal by substituting vegetable broth instead of chicken broth. If I were to make this a meat based dish I'd want to add chicken, beef, or shrimp for extra flavoring.

Pecan Pie III

This pie was delicious, although a little dense to cut through on the day I made it. The day after the texture lightened and was great. I used a pre-made graham cracker crust so to keep this pie lactose free. I used 1 1/4 cups of chopped pecans. I may have over baked the pie by 15 minutes(in my convection oven) since I forgot to check the pie after 30 minutes as suggested. I will make this pie again.

Excellent and Healthy Cornbread

I used "rice drink" instead of milk since I am lactose intolerant. My husband and I thought it turned out very good. I definitely would make this recipe again.

Mom's Zucchini Bread

This is a very tasty and easy recipe. I cut back the oil to 1/2 cup oil adding in 1/2 cup applesauce. I also cut back the sugar to 1 1/2 to 1 3/4 cup of sugar.

Easy Key Lime Pie I

This was a delicious key lime pie with a nice lime flavor, sweet and rich. I used fresh squeezed limes and followed the original recipe, rather than doubling it as other reviewers did. Therefore I used a smaller store bought graham cracker pie crust. I used the 5 egg whites to make a meringue topping, baking 10 minutes without the merinque(to cook the filling) and another 10 minutes with the meringue topping. The meringue topping made the pie look beautiful as well as taste great. I'll definitely make this pie again when I have a group to bake for.

Cream Cheese Penguins

These were a "hit" at our gathering of adults. They are very cute and fun to make. Allow yourself some time to make these. Making 1/2 of the recipe, I added 2 teaspoons of powdered Ranch Dressing to 4 ounces of cream cheese, which adds a nice flavor. I used a sturdy plastic zip lock bag for the cream cheese mixture. Cutting off a small corner allows you to easily squeeze the cream cheese mixture into the penguins body.

Ginger Veggie Stir-Fry

This is great if you like vegetarian. I added tofu, mushrooms, sugar snap peas instead of green beans, extra garlic & soy sauce. Use what ever fresh veggies you have available. I didn't add salt since soy sauce has enough salt. I mixed the water, cornstarch, and soy sauce together after cooking the veggies, and then added it at the end of cooking. I served this dish over quinoa, but rice would work too.

Wilted Spinach

My husband and I really liked this dish and will make it again. I used canola oil by mistake, but it still was delicious. I'll try it with olive oil next time. I didn't use nuts, and I didn't miss them. I also recommend making 1/2 the dressing or increasing the amount of spinach to a full bag of spinach, which is what I had on hand.

Poppy Seed Bread

My husband, son and I enjoyed this poppy seed bread very much. I used plain soy milk instead of regular milk to make the recipe lactose free. I cut down the sugar to 1 1/2 cups and used twice as much poppy seed, as recommended. Instead of butter flavor I used lemon extract. I'll definitely make this recipe again.

African-Style Oxtail Stew

Caesar Salad Supreme

I liked this recipe very much. I used half of the garlic as suggested. I love garlic and I thought this change still allowed for a wonderful garlic flavor to the salad. I made the croutons using day old grocery store garlic breadsticks. I heated them up in the toaster oven until they were crunchy,around 10 minutes. I didn't use oil to make these croutons and they turned out wonderful. I didn't use anchovies either. My teenage son who doesn't like mayonnaise didn't like this recipe unfortunately.

Red Lentil Curry

My husband and I liked this very much. I rated it a 4 star because I made a few changes. I used less hot ingredients, using only powdered curry, since we don't like real spicy foods. I used chicken broth instead of water, to add flavor. And used diced tomatos instead of tomato puree for added texture.

Chicken Vesuvio

My family liked this recipe. I used regular yellow onions and didn't use rosemary. I added more garlic and doubled the amount of gravy next time. I needed to add 1/4 cup of chicken broth toward the end of baking because the gravy was baking away. Next time I will try making it with 1 tsp of dried rosemary. I baked it at 375 degrees for 45 - 60 minutes, basting every 10 minutes.

Paul's Pumpkin Bars

My husband & I thought this recipe was delicious. The taste was wonderful even without the frosting. We liked the 'cake' texture of this recipe. I used fresh pumpkin pie filling, only 3 eggs, 1/4 cup of applesauce substituted for some of the oil, 1/2 cup whole wheat flour the rest unbleached white flour, 1 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1 tsp pumpkin pie spice, & 1 tsp vanilla.

Roast Leg of Lamb with Rosemary

This lamb roast was delicious. I put garlic cloves inside the roast to help add to the flavor of the meat. I initially roasted it at 400 degrees for 15-20 minutes, then at 350 minutes for the rest of the time. A 145 degree internal temperature is too low, the roast was very pink(almost red)through out. I will try an internal temperature of 160 degrees next time I make this recipe. Also I will add water to the bottom of the pan to help prevent the sauce from burning up on the bottom of the pan.

Crispy Fish Fillets

This was the first time I have made sole fish, it was great, a very mild tasting fish. I used bread crumbs instead of potato flakes(didn't have it), dijon mustard(1 Tbspn) instead of yellow mustard. I also added spices to the bread crumbs - garlic powder and minced dried onions. I will definitely make this again and add oregano to bread crumbs too.

Fried Soft-Shell Crab

This was a very simple recipe to which I made a few changes. My son & I enjoyed the soft shelled crab, wishing I had bought more to prepare. I added salt, garlic powder, and oregano to flour mixture. Used 2 Tbspn of oil to fry 2 soft-shell crabs. Didn't use milk, only beaten egg before dipping into flour mixture. Will definitely use this recipe again.

Ambrosia Fruit Salad

I liked this recipe very much. I used only fruit cocktail, marshmallows, and cool whip, since that was what I had in the house. I also added chopped walnuts for additional texture. I didn't used cinnamon or nutmeg, since I wasn't sure I wanted that flavoring in this fruit salad.
