Ice Cream Base

A very good basic vanilla ice-cream. I was concerned about egg flavour so I only used 5 eggs yolks (also partly because I was also baking a white cake that called for 5 egg whites!) I had mistakenly purchased whole milk instead of half and half but it still had a creamy, custardy texture. I will definitely use this recipe again.

Happy Birthday Cake

This is a great cake recipe! We made cupcakes, as that is what my daughter wanted for her birthday. We added colored sprinkles for confetti cupcakes. The texture is lovely - similar to a cake mix but without disintegrating, as I find is the case with cakes made from mix. As for the egg smell and taste that other reviewers mentioned, I didn't find that at all. I did, however, use a generous amount of quality vanilla. My suggestion to those who found it under-cooked in the middle, is to reduce temperature down to approximately 323 C for a few extra minutes (after the initial cooking time.) This allows the middle to fully cook without browning the bottom and edges. (I frequently do this with banana loaves, as well.) This is my new go-to recipe for birthday cakes!

The Best Rolled Sugar Cookies

Cut-out cookies were never my strong suit, but since trying this recipe, it is my go-to recipe! As long as the dough is well chilled, they roll nice and make a REALLY big batch. Something I've been trying when rolling the cookies is to mix a little icing sugar in with the flour to keep the dough from getting tough. They look very professional when iced.

Super Lemon Ice Cream

Superb lemon flavour and very creamy! I strained the lemon zest as I like ice cream to melt in my mouth, not to be chewed! If you like lemon, this is a keeper.

Saskatoon Pie

Saskatoons are plentiful where we camp, and this year was a bumper crop. I had enough for three pies so I tripled the recipe. Delicious! Took some to work for a few people that grew up rural, just to give them a taste of their childhood! I will apply this recipe to blueberries, if I am lucky enough to score some this summer. Great recipe!
