Chocolate Velvet Ice Cream

An excellent recipe, especially for those who have just gotten their ice cream machines and are looking for a basic recipe to start with. I changed it a bit, fearing that using the whole 2 2/3 cup of heavy cream would be too rich. I only used 2/3 c cream and 2 c half and half. It tasted wonderful. I also omitted the choclate chips simply because it is rich enough on its own without added chocolate. It reminded me of the chocolate soft serve you can get at a popular fast food place. Exact same flavor. This recipe is definitely a keeper, perhaps next time I will add some mint extract, or perhaps some almonds and marshmallows.

Ramen Noodle Frittata

Excellent receipe! It was simple to make and the kids loved it. I did add a bit of milk to make the egg go further and added some frozen peas and broccoli. It was an excellent way to sneak it some good veggies for my picky niece.

Awesome Roast Beef

This is a wonderful recipe. I have altered it some to suit our tastes by adding extra onion diced, carrots, potatoes and in the last hour of cooking I will add cabbage cut up into wedges. I am notorious for never making a recipe the same way twice and have experimented with various spices. Pepper, marjoram, bay leaves, chili powder all work well and if you want a bit of kick add a few splashes of hot pepper sauce, I recommend habanero instead of jalapeno.

Skillet Ham, Cabbage and Potatoes

Very good! Cabbage is one of our favorite vegetables and this is a nice way to make it. I took the advice of one of the others and sauted the ham with the onions, it made almost a gravy that was very very good!

Six Can Chicken Tortilla Soup

Very easy. I enjoyed the taste, it also is good with a dollop of sour cream. I have made it a couple of times now and have altered the ingredients to suit my tastes.

Atlantic Corn Chowder

This is absolutely wonderful. I have made this soup several times and vary it each time. I used leftover ham once and bacon another time and cheese a third time. My husband will eat anything I cook but he raved about this.

Bacon Roll Ups I

I made these for an early thanksgiving dinner and everyone loved them. My husband hinted that he would eat these for dinner if I was ever inclined to make them. I did a bit of experimenting since I never can follow a recipe exactly and found that the thick-sliced peppered bacon works beautifully. I also added some chili powder and minced garlic.

Chunky Pecan Pie Bars

Wonderful recipe. I substituded walnuts for the pecans and did not have corn syrup on hand so mixed 1/2 C brown sugar with 1/4 C water. It turned out nicely and everyone has been snitching pieces from it nonstop since it got out of the oven. I will be making this again.

Apple Dumplings II

Loved the recipe, cut the apple ingredients in half and kept the dough as it was, then sliced the apples into quarters, making smaller dumplings and served it with ice cream. Everyone seemed to like this better.

Army SOS Creamed Ground Beef

My father, who has not tasted this since his days in the Marines many years ago, loved it. We served it over toast and had diced potatos for a side dish. I did add onion and enjoyed the taste.
