Slow Cooker Mashed Potatoes

This was a huge hit at our Thanksgiving dinner yesterday. Since I was cooking for 20 ppl, I doubled the recipe and put in a large oval crockpot. Everyone raved about them and all the leftovers were send home with guests who wanted them later that night :) One even suggested she would make potato pancakes with them in the morning. Definitely a keeper -- especially to bring to a potluck.

Joy's Prizewinning Trifle

I admit, I didn't actually eat any of this since I am on a strict diet -- however, I made it for thanksgiving yesterday and the entire bowl was gone with people taking 2nd and 3rd helpings. I was asked many times for the recipe. I think the next time I make it though, I will chop up the angel food cake rather than slice it horizontally. As a hint, the longer it was in the refrigerator, the better it tasted. I guess it gave the ingredients times to meld together. Made before noon and served around 5pm. Definitely a keeper!

Chocolate Chip Zucchini Bread

This is SO chewy, like a brownie. My daughter's college team loved this recipe! The recipe yields 2 loaves and is now a 'must bring' when I visit.

Extra-Easy Spinach Lasagna

Magpie's Cucumber Sauce

Super simple and very yummy. I used fresh mint but only had dried basil. I used greek yogurt to increase the denseness of the sauce.

Oregon Salmon Patties

I served this to my daughter's volleyball team during pre-season and it was a huge hit when paired with Magpie's Cucumber Sauce. It scaled to 24 easily, just use a few fewer eggs and a bit more cracker crumbs than the recipe calls for when you increase the servings from 5 to 25.

Pesto Sauce

Made enough of this recipe to freeze individual portions in an ice cube tray. Once frozen, I put them in a freezer bag. Now I can take one pesto cube and place on a chicken breast -- just as many as I need -- before cooking.

Cake Balls

My family went crazy for this dessert. I made some small changes which worked well. Refrigerated the cake/frosting mixture overnight, formed the balls and froze them for a minimum of one hour. This allowed me to dip them in the chocolate without fear of them falling apart. Used chocolate cake w/chocolate frosting, dipped in white and yellow cake w/white frosting dipped in chocolate. Gave as holiday gift treats.

New England Seafood Chowder

Used Salmon instead of Haddock due to availability. Chowder was good and definitely better on the second day. I would add more bacon and undercook the salmon slightly as it got a bit dry. My family really like this recipe and it was not labor-intensive at all.

Banana Split Cake II

A little labor intensive but worth the work. I added mini-semi sweet chips, used magic shell to decorate and substituted pecans for walnuts. Wish I could buy pre-crushed nilla wafers but may take out the cuisinart next time to pulverize them.

Puppy Chow I

This is my go-to treat for my daughter's volleyball team. I started making it 10 years ago when she was a girl scout, then for her school volleyball team. Now I'm not allow to visit her at college without her team clamoring for it. Shaking in a large brown paper grocery sack is vital so the cereal doesn't get soft. Make sure the bag is completely closed when you shake (trust me on this). I have added whole peanuts and raisins to this also with good results.
