Thai Chicken Curry in Coconut Milk

This was delicious, but I added more paste as well - more like a tablespoon. I didn't use the lemon zest, and I actually sauteed the chicken, peppers and onion in the oil, added a little chicken broth, then the rest of the ingredients. I used a dash of fish sauce and a bit of soy, and omitted the cilantro; my husband HATES chicken and he had two helpings! Serve over rice!

Thai Green Curry Chicken

Black Bean Salsa

I use 1 can each black beans (rinsed and drained), corn (drained) and tomatoes with green chilis (drained). I add 1/4 vidalia onion, 1/2 green pepper, and fresh parsley, cilantro and chives. Added olive oil, vinegar and a healthy dash of goya adobo seasoning...yummy!

Sage Pork Chops

I have made this type of recipe for years, from my mother. Instead of bouillion I use packaged french onion soup and water; cook 20 minutes, then add 1/2 c of regular rice and cook 20 minutes more. Delicious!

Toffee I

Please DO NOT use a 13x9 pan for this! I've always used a cookie sheet for toffees and brittles - this would NOT come out of the pan. At all. I am now trying to salvage my pan (glass pyrex). I followed the directions to a T - the only thing I changed was using pecans instead of walnuts.

Microwave Peanut Brittle

I was very skeptical on this recipe but was pleasantly surprised! Next time though, I'll use raw peanuts - some of the peanuts burned a little but it's still delicious!

Marinated Tuna Steak

OMG! My husband is a big fisherman and I've cooked tuna more times than I can remember - but this was DELICIOUS! I used tangerine juice and lemon pepper (no lemons, no orange juice) and I left out the garlic because I didn't have any. My steaks were thick - a little over an inch but this was juicy and moist - I'll never do tuna any other way!

Green Rice I

I made some substiutions on this - used parmesan because I had no cheddar. Used heavy cream and milk instead of the evap. and seasoned the heck out of it. The flaor was good but it was not creamy at all. I'll try again with cheddar but it was pretty tasty! Also, I had to cook mine 45 mins.

I agree that there was way too much garlic (and I LOVE garlic) and too much worcestershire sauce - i would do a tsp of each rather than a tablespoon. However, everything else was great!

Best Brownies

These were ridiculously easy and insanely moist and delicious! I just sprayed the pan with non-stick coating rather than grease and flour, and I didn't frost them because I was being lazy. AMAZING!!

Onion Soup Pork Chops

I have made porkchops this way for years! I use regular rice and top each pork chop with a slice of tomato (my mother always did it that way). Easy and always moist and tender!

Ciabatta

This did not work for me at all - the 'sponge' wasn't spongey at all, more like a blob of dough. I kept at it anyway, and it seemed to be going OK until I baked it and it rose like a normal loaf of bread in the over. Not sure what went wrong as I followed the recipe to the word. I won't try this again.

Toffee Coffee Cake

I made this for my husband to take to work, so I actually didn't get to try it; however he said it was amazing and everyone loved it. I used an 8x8 pan and cooked it for about 40-45 mins. I will make this again and again!

Juicy Roasted Chicken

I also combined the Garlic chicken recipe - only to the extend of using the parchment paper. Wow, that made cleanup a breeze! I did onion and garlic powder inside and out, used real butter, and Tony's Cajun seasoning on the outside. I wasn't sure how much the chicken weighed, and I didn't have a meat thermometer so I winged it (no pun intended) - I probably cooked it too long, but it was still moist and delicous! I'll never oven roast any other way!!

Heavenly Zucchini Salad

This is so good! A friend made this and gave me a container of it, ever since my hubs has been on me to make it. I didn't have cider vinegar so I used half red wine vinegar and half white vinegar. I used roasted red peppers because that's what I had - one whole green pepper, and only about 1/4 c sugar and it's still delicious! I didn't have sweet pickles either. This is a crunchy, delicious salad!

Jalapeno Popper Spread

If I could give this 10 stars, I would! I made this for a tailgate party yesterday and there was not a DROP left! I did it in a crockpot on low for 3 hours - used 4 oz of canned jalepenos and served with triscuits. It was a huge hit!!!

Robbi's M&M Cookies

These were just OK - they taste like a sugar cookie with M & Ms in them. Next time I'll take a toll house cookie recipe and substitute the candies. Not bad, just average. I substituted margarine for the shortening but that shouldn't have made a difference.

Whole Grain Loaf

This is a delicious, sort of sweet easy bread! I also winged it a little bit, I had no rye so I used more whole wheat; I didn't have wheat germ so I used sunflower seeds, and I cooked it in a loaf pan - this made a beautiful, big loaf! Mine never really 'doubled' on the first rise, and I only let it rise about 20 mins in the pan and it's gorgeous!

English Muffin Bread

I've made this many times, and actually gave a good bit for Christmas presents last year. Yes, the dough is wetter than a regular dough, but that makes the texture for like an english muffin. And for those who said it tasted better toasted....well DUH. Have you ever eaten an untoasted english muffin!??? This recipe is a cinch and a no brainer. DELISH!
