Delicious Ham and Potato Soup

Made this soup without any additional changes knowing that I could save this if necessary by making changes after it was done. It did come out a bit thin in consistency for a ham and potato soup for my liking and did taste a bit bland though I was aware that the author suggested to add extra ingredients to improve it to our liking. Did add ingredients to thicken the soup by mashing some of the potatoes till the consistency was just right (you may add 1/4 cup 10%cream in place of 1/4 cup of the milk when making the recipe.) I topped off by adding savoury, and fresh thyme. It is important to add the pepper as freshly ground from a pepper mill. As well, a good recipe done as is without any changes – compliments to Ellie.

Kingman's Vegan Zucchini Bread

I am not a vegan and coming from India I love vegetarian and bake my own bread for 3 years now. Was very excited to try this at first but on reading the ingredients was shocked by the 2 cups sugar, never mind the uswt. apple sauce! I thought it might be too sweet as in my baking I use no more than 2 TBSP sugar for the proofing of yeast. I decided to try this hoping that the ingredients would balance out and offset a bit the sugar. Very disappointed that it turned out much too sweet and mushy – even for a cake! Sorry but this was a waste of ingredients, time and electricity. Diabetics and overweight Vegans beware! To be noted with a bit of humor that there is a video posted on top of the reviews of this recipe "5 minute blood sugar killer!".

Slow Cooker Beef Stew I

The beef was dry and fibrous even though it was cooked on low for 10 hours and was falling apart nicely! No body ate the beef but the sauce and veggies were gone even though the potatoes and veggies were over cooked, discolored and mushy!

Splendicious Slow Cooker Spaghetti Sauce

What a lot of measuring and work before even beginning to cook. The amount and the ingredients did not sound right but decided to try it based on some reviews – too soupy and salty. Had to put this in the fridge and tried to rescue it later, making some additions.

Easy Biscuits

This recipe did not work out for me. They did not rise as high as the photos suggested about 10% higher than when they were put in the oven. Followed the recipe without tweaking, very easy to put together, worked the dough to a minimum just till all ingredients were together. I was expecting a fluffier biscuit. Also the shortening I thought was too much at 3/4 cup turned out heavy could not eat any more! Will have to look for a recipe that suits my fancy.

Home-Fried Cheese Sticks

The recipe is simple and is easy to make but I had two problems with this one even though I followed it exactly. Firstly the cheese used is string cheese which in my mind is quite a chewy cheese, I used mozzarella string cheese and secondly the sticks, cooking at five minutes in deep oil at 350 is too long, I lifted them out after some cheese started oozing out of the coating in just 2 minutes even though I had previously frozen them for 2 hours, but this was not a major problem just that they were quite chewy and not tasty enough and no body had more than one stick. I prefer the store bought frozen varieties to satisfy our taste buds.

Ultimate Party Meatballs

I agree with the reviews that the meat balls, not being home-made, reduces the star status to 3. I've prepared store-bought meat balls only to find them all spongy and too processed. Also they are not slow cooked if you use the HIGH setting for 4 hours as recommended by the maker, should be 5 hours on AUTO or 8 hours on LOW which is a combo of HI and LOW settings. Assuming that time is not not a factor. Also the 15 minutes on stove top is not enough for the sauce to penetrate the meat.

Crispy Cheese Twists

This recipe is not only very easy but great tasting. So happens that this recipe is printed on the pakage side of Tenderflake Puff Pastry that I bought recently with a few changes. I had followed the recipe on the package which consists of Parmesan and Gruyere with fresh ground Pepper and a sprinkle of Italiano seasoning. This is sprinkled on only ONE side of the pastry then with a rolling pin lightly press the cheeses into the dough then twisted with the cheese side hidden inside and placed on a baking sheet lined with parchment paper, baked at 375F for 10 min turned over with tongs then baked another 2 minutes. Remove and place on paper towels to absorb any grease. These don't stick to the pan as the cheese is on the inside. Instead of the Gruyere I used extra old, sharp, cheddar for that great taste! No need for salt or butter.

Vegan Curried Rice

Great recipe idea. But only 4 stars because even though the ingedients were correct, some of the amounts were not. Firstly, we need to use double the liquid for any raw rice to cook so add an extra cup of stock or water with quarter teaspoon salt. Secondly the dry spices need to be reduced to half or it would get too hot and over spicy! I used Basmatti rice and added one stalk chopped celery, quarter cup green peas in the last 5 minutes of cooking time. Basmatti Rice needs only 11 minutes on low simmer with closed lid. Finally I sprinkled some chopped spring onions and chopped cilantro, squeezed some fresh lemon juice (1 table spoon) mix it all up – Paradise on earth!

Dilled Creamed Potatoes

Not bad! I love all creamy stuff and I'm a potato lover, but the rest of the family said it seemed too fatty to taste. I would not recommend this to anyone who is concerned about their cholesterol! Next time I'd go with 10% cream and cut that in half adding milk and yogourt for the rest, using less liquid accordingly. Otherwise the recipe is good. Just three stars because of the quart of heavy cream!
