Vegan Brownies

I really wanted brownies, but didn't have eggs...so tried this recipe out. I usually make brownies from a recipe on the Hershey's website, so that's what I'll use to compare. I prefer a more cake like brownie for starters, which I get from Hershey's. This recipe was close though. I was leary of the oil...but followed the recipe exactly. I cooked them for about 8-10 min longer as suggested by the creator. They turned out very fudgy tasting with a more cake like texture. The texture was a little off because it wasnt staying together as well as I wanted it to. It was still moist enough and satisfied my sweet tooth. I'll keep this in the recipe box for the future....but just prefer my egg in there. Keep in mind this review is from a non-vegan....so take it with a grain of salt ;)

Katie's Chicken and Broccoli Pasta

The end product was OK when it was fresh, but a day in the fridge definitely dried everything out. I needed to add some more olive oil. I would have added parm cheese if I had any on hand. It was a very light lemony type of flavor. Wasn't really anything that I would crave again, but I wouldn't not eat it again if someone made it. It was good...just not remarkable.

Slow-Cooker Chicken Tortilla Soup

I've never had this soup outside of making it from this recipe. Yummy yummy. I made it for a Pot Luck and EVERYONE loved it. It wasn't too spicy. I brought along some hot sauce for anyone who wanted to kick it up a notch. And they did...almost emptied a new hot sauce bottle. lol. I will be making this recipe again tonight, but since I have a garden full of jalapenos I'll be using those in place of the canned green chiles instead. :).

Chicken Pot Pie IX

I made enough of this recipe to freeze half of it for later. My boyfriend wouldn't let me freeze it. He ate the first half of the recipe and as I was putting the cooled second half in the freezer he started to freek out...."What are you doing?!? Don't freeze it, I want to eat it!". So, needless to say he LOVES it and is now requesting that I make this recipe WEEKLY. He's a picky eater, so this is good news I suppose...just more work for me :).

Cilantro-Lime Dressing

This is so yummy. I'm not really into hot either but I did half of the jalapeno and it was fine. The lime and cilantro tame the jalapeno. I don't know how long it would last in the fridge so I was so sad when I had to throw like half of it away when it eventually turned :(. It makes a lot...about what you get in a store bought dressing size. Highly recommend...going to make again very soon.

Special Buttercream Frosting

I wanted to eat the whole batch out of the bowl. Screw the cake! This was sooooo good. I made this with a yellow cake for mothers day and got so many compliments. It was the best cake they ever had. It did make a lot, but next time if I make cake it'll be a double decker just so I can use more yummy icing on it!

Wow. Can I just leave it as that. Wow. My family has a huge sweet tooth and I made this for mother's day. People were actually sad when it was gone. They said it was the best cake they ever had. I paired it with a buttercream icing. Wow.
